Time 35m

Yield 6 serving(s)

Number Of Ingredients 8

6 -8 medium potatoes, peeled
1 medium onion
3 eggs
2 garlic cloves, minced
2 cups fresh spinach, chopped (or 1 cup defrosted frozen spinach, drained well)
1/2-3/4 cup matzo meal
salt & freshly ground black pepper, to taste
3 tablespoons olive oil

Steps:

  • Grate the potatoes and onions into a colander. Add 2 of the eggs and combine with the grated potato mixture. Add garlic and spinach. Mix well and press out excess liquid through the colander.
  • Transfer the potato mixture into a large mixing bowl. Add the remaining egg, the matzo meal, salt and pepper. Combine well with your hands. If the mixture is loose, add more meal. Allow the pancake mixture to rest 5 minutes while you heat the oil in a large nonstick skillet over medium heat.
  • Add large spoonfuls of the pancake mixture and press down gently with the back of the spoon to form 1/2-inch thick pancakes about 3 inches in diameter.
  • Cook 5 minutes until golden brown, turn pancakes and repeat the process until both sides are cooked. If the pancakes are still a bit undercooked, put them on a baking sheet for an additional 5-8 minutes in a 375-degree oven.

Use up leftover mashed potato in these breakfast pancakes, delicious with bacon and eggs

Provided by Good Food team

Categories     Breakfast, Brunch

Time 45m

Yield Makes 12-15

Number Of Ingredients 9

250g cold mashed potato , or 2 medium-size floury potatoes, cut into chunks
75g plain flour
1 tsp baking powder
2 eggs
125ml milk
1 rounded tbsp finely snipped chives
1 tsp sunflower oil
knob of butter
crispy bacon and scrambled eggs to serve, if you like

Steps:

  • If you've got potatoes not mash, cook them in boiling water until tender. Drain well and press through a potato ricer or mash. Weigh out 250g and cool.
  • Sieve the flour and baking powder onto cooled mash. Whisk eggs and milk together and add to the potato mix with the chives. Whisk the batter until smooth.
  • Heat a large non-stick frying pan over a medium heat. Add ½ tsp sunflower oil and a dot of butter. When the fat is hot, start to cook the pancakes. Add 1 tbsp of batter for each pancake and cook 4 at a time. Cook for about 1 min until the underside is golden brown and small bubbles appear.
  • Flip the pancakes and cook until golden. Remove from the pan and keep warm while you cook the remaining pancakes in the same way, adding a tiny bit of oil and butter to the pan as and when needed. Serve the pancakes in stacks with creamy scrambled egg and crisp rashers of streaky bacon.

Tips:

  • Select the Right Potatoes: Opt for starchy potatoes like Russets or Yukon Gold, as they hold their shape well and become fluffy when mashed. Avoid waxy potatoes like Red Potatoes, as they tend to retain their structure and can result in dense pancakes.
  • Cook Potatoes Thoroughly: Ensure the potatoes are fully cooked before mashing them. Undercooked potatoes will be difficult to mash and may not bind well with the other ingredients.
  • Use Fresh Spinach: Fresh spinach imparts the best flavor and texture to the pancakes. If using frozen spinach, thaw and squeeze out excess water thoroughly before incorporating it into the mixture.
  • Season Generously: Don't be shy with the seasonings. Add salt, pepper, garlic powder, and dried herbs like thyme or oregano to enhance the flavors.
  • Handle the Mixture Gently: Avoid overmixing the pancake batter, as it can make the pancakes tough. Mix the ingredients until just combined.
  • Form Pancakes Properly: Use a spoon or ice cream scoop to portion the batter and gently shape it into patties. Avoid pressing down too hard, as this can compact the mixture and result in dense pancakes.
  • Cook Pancakes Thoroughly: Cook the pancakes over medium heat to ensure they are cooked through without burning. Flip them carefully to prevent them from breaking apart.

Spinach potato pancakes, also known as colcannon cakes, are a delightful fusion of Irish and American cuisine.
