1 package (9 ounces) fresh spinach, chopped

2 cups chicken stock
4 cups water
3 tablespoons olive oil
1 large onion, thinly sliced
6 cloves garlic, chopped
2 large potatoes, cubed
1 (16 ounce) can garbanzo beans, drained
1 (10 ounce) bag fresh spinach
½ cup diced roasted red peppers
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Bring chicken thighs, chicken stock, and water to a simmer in a large saucepan over medium-high heat. Reduce heat to medium-low, and continue simmer in until the chicken is no longer pink in the center, about 20 minutes. Remove the chicken thighs, and set aside to cool. Reserve the broth.

2 large leeks, thinly sliced (white and pale green parts only)
10 ounces bacon, cut into small pieces
2 large cloves garlic, sliced
1 pound yellow potatoes, cut into bite-size cubes

  • For curry oil:
  • Cook oil and curry powder in heavy small skillet over medium-high heat until curry powder darkens slightly, about 1 minute. Transfer to small pitcher. Can be made 1 day ahead. Cover and chill. Let stand at room temperature 1 hour before serving.
  • For minted yogurt:
  • Mix yogurt, green onions, and chopped mint in medium bowl. Cover and chill. Can be made 6 hours ahead. Keep chilled.
  • For soup:
  • Heat oil in heavy large pot over high heat. Add next 5 ingredients. Cook until onion and cauliflower begin to brown, stirring often, about 5 minutes. Add potatoes; stir 2 minutes. Add turmeric and stir 1 minute. Add broth and bay leaves. Bring to boil, reduce heat to medium, and simmer until vegetables are tender, about 10 minutes. Add spinach and stir until wilted, about 1 minute. Add tofu; heat until warmed through, about 1 minute. Season with salt and pepper. Discard bay leaves.
  • Divide soup among 6 bowls; sprinkle with chopped parsley. Serve salsa, curry oil, and minted yogurt alongside.

1 1/2 cups onions, chopped
1 1/2 cups celery, chopped
1 teaspoon salt
2 tablespoons butter
3 cups potatoes, cubed
3 cups water
1 teaspoon dried dill
1/2 teaspoon dried marjoram
1 cup milk
4 ounces cream cheese
dried shiitake mushroom, sliced
spinach, roughly chopped

Steps:

  • In a soup pot, saute the onions, celery and salt in the butter for 5 minutes on a medium high heat.
  • Add the potatoes, water, dill and marjoram, cover and bring them to boil.
  • Reduce the heat and simmer until the potatoes are soft, about 10 minutes Add the milk and cream cheese and puree using an immersion blender or in batches in a blender.
  • To the blended soup add the shitake mushrooms and spinach and cook until spinach is wilted and mushrooms are reconstituted.
  • Or, add spinach and pre-reconstituted mushrooms directly to your soup bowls, top with cheddar cheese (or monterey jack) and then ladle in your soup.
  • Serve hot. Delicious with garlic bread.

1 tablespoon vegetable oil
1 onion, chopped
1 ½ quarts water
1 cube chicken bouillon
2 cups fresh spinach
4 small potatoes, peeled and halved
ground nutmeg to taste
½ cup milk
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over medium heat. Cook and stir the onion until tender.
  • In a saucepan, bring the water to a boil. Reduce heat to low, and dissolve the bouillon cube in the water.
  • In a blender or food processor, blend the onion, spinach, potatoes, nutmeg, and about 2 cups of the bouillon until thick and smooth.
  • Blend the potato mixture into the saucepan with the remaining bouillon. Bring to a boil, reduce heat, and simmer 20 minutes. Stir in the milk, and continue cooking 10 minutes. Season with salt, pepper, and more nutmeg to taste. Thus the soup is complete.

1 rib celery, finely chopped
1 onion, finely chopped

1 cup whole milk
One 12-ounce bottle light-bodied beer
2 large russet potatoes, peeled and chopped
2 cups grated extra-sharp Cheddar (about 8 ounces)
Dash hot sauce
Dash Worcestershire sauce
Sour cream, for topping
4 slices bacon, cooked crisp, for topping
2 tablespoons chopped fresh chives, for topping

Sprinkle with hot sauce, Worcestershire, salt and pepper. Divide the soup among bowls and top with the remaining Cheddar, sour cream, bacon and chives.   • For the pecans: Melt the butter in a large skillet over medium-low heat. Stir in all the spices and the pecans. Stir and toast the pecans for about 5 minutes. Transfer them to a plate to cool.
  • For the salad: Whisk together the balsamic vinegar, Dijon mustard and shallots in a small bowl. Drizzle in the olive oil in a continuous stream, whisking to emulsify. Season with a pinch of sugar, salt and pepper.
  • Add the spinach to a large serving bowl. Toss the greens with the prepared dressing, the bacon, blue cheese, cherry tomatoes and spiced pecans.

2 tablespoons butter
3 sprigs basil
1 teaspoon coriander seed
1 cup sliced leek
1 1/2 lbs red potatoes, peels and cubed (about 4 cups)
30 fluid ounces broth
1/4 cup water
4 cups coarsely chopped spinach leaves
1 teaspoon lemon juice
salt and pepper
sour cream or yogurt (to garnish)

Steps:

  • Melt the butter in a 4 quart saucepan
  • Add the basil, coriander seeds and the leeks
  • Cook until the leeks are tender, stirring often
  • Add the cubed potatoes, broth and water
  • Heat to boiling, reduce the heat to low
  • Cover the pot and simmer for 25 minutes until the potatoes are tender, stirring occasionally
