¼ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese, divided
3 tablespoons seasoned bread crumbs, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush both sides of each portobello mushroom cap with Italian dressing. Arrange mushroom on a baking sheet, gill sides up.
  • Bake mushrooms in the preheated oven until tender, about 12 minutes. Drain any juice that has formed in the mushrooms.
  • Beat egg, garlic, salt, and black pepper together in a large bowl.
  • Stir spinach, pepperoni, Parmesan cheese, 3 tablespoons mozzarella cheese, and 3 tablespoons bread crumbs into the eggs until evenly mixed.

¼ cup olive oil
30 large whole fresh mushrooms, stems removed
1 egg
salt and ground black pepper to taste
1 teaspoon minced garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained
¼ cup grated Parmesan cheese
¼ cup shredded Gouda cheese
¼ cup shredded mozzarella cheese
¼ cup dry bread crumbs
¼ cup grated Parmesan cheese

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Brush 30 cups in muffin pans lightly with olive oil. Brush the remaining olive oil onto the mushrooms on all sides, and place them gill-sides-up into the muffin cups.
  • Bake the mushrooms in the preheated oven until just tender, about 12 minutes. While the mushrooms are baking, beat the egg, salt, and garlic in a mixing bowl. Stir in the drained spinach, 1/4 cup Parmesan cheese, Gouda cheese, mozzarella cheese, and bread crumbs until evenly blended.

1/2 cup balsamic vinegar
1/2 cup reduced-sodium soy sauce
2 garlic cloves, pressed
1/4 teaspoon coarse kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup Marsala (optional)
4 large fresh thyme sprigs
6 large portobello mushrooms
Filling:
1 10-ounce package frozen spinach
1 pound button mushrooms
2 tablespoons olive oil
1 cup chopped sweet onion (such as Maui or Vidalia)
3 garlic cloves, pressed
1/4 cup plus 6 tablespoons finely grated Parmesan cheese
1/4 cup unseasoned dry breadcrumbs
1 5-ounce package soft fresh goat cheese, crumbled

Steps:

  • For marinated mushrooms:
  • Whisk first 6 ingredients and Marsala, if desired, in medium bowl for marinade. Stir in thyme sprigs. Cut stems from mushrooms and place stems in processor. Arrange mushrooms, gill side up, in 15x10x2-inch glass baking dish. Pour marinade over mushrooms and marinate 4 hours, turning to coat occasionally.
  • For filling:
  • Cook spinach according to package directions. Drain; cool. Using hands, squeeze excess water from spinach. Place in small bowl.
  • Add half of button mushrooms to processor with portobello mushroom stems. Using on/off turns, process until coarsely chopped. Transfer to medium bowl and repeat with remaining mushrooms. Heat oil in heavy large skillet over high heat. Add onion; sauté until beginning to brown, stirring often, about 3 minutes. Add garlic and stir 30 seconds. Add chopped mushrooms, sprinkle with salt, and increase heat to high. Cook until almost all liquid evaporates, stirring often, about 8 minutes. Season mushroom mixture with salt and pepper. Transfer to large bowl; cool to room temperature.
  • Add spinach, 1/4 cup Parmesan, and breadcrumbs to mushroom mixture; toss to distribute evenly. Add goat cheese and toss gently to distribute evenly. Season filling to taste with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Cover filling and let stand at room temperature.
  • Preheat oven to 400°F. Transfer marinated mushrooms, with some marinade still clinging, to rimmed baking sheet, gill side down. Roast until beginning to soften, about 15 minutes. Turn mushrooms over. Divide filling among mushrooms. Sprinkle remaining 6 tablespoons Parmesan cheese over and bake until heated through and cheese begins to brown, about 15 minutes.

5 slices bacon
1 (10 ounce) package frozen chopped spinach
12 large mushrooms
3 tablespoons butter
2 tablespoons finely chopped onion
2 cloves garlic, peeled and minced

¼ cup grated Parmesan cheese
salt and pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish with 2 tablespoons butter.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place frozen spinach in a medium saucepan with 1/4 cup water. Bring water to a boil, then reduce heat to medium and cook spinach covered 10 minutes. Uncover and stir. Remove from heat and drain.
  • Remove stems from mushrooms. Arrange caps in the baking dish. Finely chop stems.

8 ounces spinach, rinsed and chopped
1 tablespoon crumbled feta cheese
4 (4 ounce) fillets flounder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray an unheated medium skillet with no-stick spray. Heat the skillet over medium heat. Add the mushrooms and cook about 5 minutes or until the liquid released from the mushrooms has evaporated, stirring occasionally.
  • Add the spinach to the skillet. Cook and stir about 2 minutes or until spinach is wilted. Remove from the heat and drain excess moisture. Sprinkle the feta cheese over the vegetables, then stir it in.
  • To assemble the fish rolls, place one-quarter of the spinach mixture onto the wide end of each filet. Carefully roll the filet around the spinach mixture. Use wooden toothpicks to hold the end of each roll in place.
  • Spray an 8x8 inch baking dish with non-stick spray. Place the fish rolls, seam side down, in the baking dish. Add 2 tablespoons of water. Loosely cover with foil.

2 3/4 pounds button mushrooms (about 48; each about 1 1/2 inches in diameter), stemmed

Steps:

  • Preheat oven to 375°F. Cook bacon in heavy large skillet until crisp, about 8 minutes. Transfer bacon to paper towels to drain. Coarsely crumble bacon. Discard all but 1/4 cup plus 2 teaspoons bacon fat (adding olive oil if necessary to equal that amount).
  • Heat 2 teaspoons reserved bacon fat in heavy medium skillet over medium heat. Add chopped onion and sauté until tender, about 5 minutes. Transfer to medium bowl and cool; mix in bacon, spinach, feta, cream cheese, and crushed red pepper. Season filling to taste with salt and pepper.

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
4 tablespoons (1/2 stick) unsalted butter

3/4 cup crumbled feta
1/4 cup chopped fresh basil

Steps:

  • Preheat the oven to 425 degrees F.
  • If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
  • Melt the butter in a large skillet over medium-high heat. Add the chopped mushroom stems and spinach and cook, stirring occasionally, until just soft and wilted, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.

4 whole boneless skinless chicken breasts
toothpick
1 (10 ounce) package frozen chopped spinach
2 tablespoons butter
12 small mushroom caps (crimini or button)
2 garlic cloves, cracked or 1/4 teaspoon garlic powder
1 small shallot (quartered)
salt and pepper, to taste
1 cup part-skim ricotta cheese
1/2 cup grated parmigiano-reggiano cheese
1/2 teaspoon ground nutmeg
2 tablespoons extra virgin olive oil
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine (not cooking wine)
1 cup chicken broth

Steps:

  • You will also need: large plastic food storage bags or waxed paper.
  • Place breasts in the center of a plastic food storage bag or between 2 sheets of waxed paper.
  • Pound out the chicken from the center of the bag outward with a mallet or a heavy skillet.
  • Be firm and controlled with your strokes.
  • Defrost spinach in the microwave.
  • Transfer spinach to a kitchen or a piece of cheese cloth.
  • Twist towel around spinach and wring it out until the spinach is very dry.
  • Transfer the spinach to a medium size mixing bowl.
  • Place a non-stick skillet over medium heat.
  • When skillet is hot, add the butter, mushrooms, garlic and shallot.
  • Season with salt and pepper, and saute 5 minutes.
  • Transfer mushrooms, garlic and shallot to a food processor.
  • Pulse to grind the mushrooms, and transfer to the mixing bowl, adding the processed mushrooms to the spinach.
  • Add ricotta and grated cheese and nutmeg to the bowl.
  • Stir to combine the stuffing.
  • Return the skillet to the stove over medium-high heat.
  • Place a mound of stuffing on each breast, and wrap and roll breast over the stuffing.
  • Secure breasts with toothpicks.
  • Add 3 Tablespoons of extra-virgin olive oil to the skillet.
  • Add breasts to the skillet and brown on all sides, about 10 to 12 minutes.
  • The chicken will cook quickly, because it is thin.
  • Remove breasts.
  • Add butter and flour to the skillet.
  • Cook butter and flour 1 minute.
  • Whisk in the wine and reduce for another minute.
  • Whisk in the chicken broth, and then return the breasts to the skillet.
  • Reduce the heat and simmer until ready to serve.
  • Remove the toothpicks.
  • Serve the breasts either whole, or slice on an angle and fan out on the dinner plates.
  • Top the stuffed chicken breasts or sliced stuffed chicken breasts with generous spoonfuls of the sauce.

2 tablespoons olive oil, divided
3 ounces portabella mushrooms, sliced
4 ounces onions, diced

1/4 cup white wine
1/4 teaspoon dried thyme
1/4 teaspoon rosemary
salt and pepper
1 egg, lightly beaten
1 tablespoon butter
1/4 cup flour

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat 1 tablespoon of the olive oil. Saute mushrooms, onions, and garlic for 4 minutes. Add spinach and wine cook until wine is evaporated.
  • Season with thyme, rosemary, salt, and pepper and allow to cool.
  • Place chicken between plastic wrap and pound thin.
  • Season both sides of breast with salt and pepper.

1 1/2 cups chopped fresh spinach
3/4 cup finely ground almonds (about 3 ounces)
1/2 cup sour cream
6 boneless chicken breast halves with skin

Steps:

  • Mix first 4 ingredients in small bowl until smooth. Season garlic butter to taste with salt and pepper.Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using
  • Melt 2 tablespoons garlic butter in heavy large skillet over medium-high heat. Add mushrooms and sauté until tender and all liquid evaporates, about 3 minutes. Add spinach; sauté until just wilted, about 1 minute. Transfer mixture to medium bowl. Cool 30 minutes. Stir in ground almonds and sour cream. Season stuffing with salt and pepper.
  • Run fingers between chicken skin and meat to loosen (do not remove skin). Spread 2 teaspoons garlic butter under skin over meat of each chicken breast. Spoon 2 generous tablespoons stuffing under skin of each chicken breast. Using toothpicks, skewer skin to chicken to enclose stuffing. Arrange chicken on large baking sheet. Spread remaining garlic butter over top of each chicken breast.(Can be prepared 4 hours ahead. Cover and refrigerate)
  • Preheat oven to 350°F. Bake until chicken is cooked through, about 30 minutes. Transfer chicken to platter.

3/4 cup reduced-fat ricotta cheese
3 tablespoons butter, softened
1 egg
2/3 cup grated Parmesan cheese
1/2 cup water chestnuts, chopped
1/3 cup finely chopped pecans, divided
56 large fresh mushrooms (about 3-1/2 pounds)
Refrigerated butter-flavored spray

Steps:

  • In a large saucepan, bring spinach and water to a boil. Reduce heat; cover and cook for 3 minutes. Drain; squeeze dry and finely chop. In a large bowl, beat ricotta and butter until smooth. Beat in egg. Stir in Parmesan cheese, water chestnuts, 3 tablespoons pecans and chopped spinach., Remove stems from mushrooms (discard or save for another use). Spray inside of mushroom caps with butter-flavored spray. Place caps on a baking sheet coated with cooking spray. I think this recipe came from Weight Watcher, but am unsure-a friend lent her book to me but never made these. LOL b/c when I made these for her and her hubby he loved them! It is important that you squeeze out as much water as posssible out of the spinach or the whole thing will be soggy. I serve it with grilled steaks and recipe #223749 and strawberries dipped in chocolate. I usually prepare the dipped strawberries right before our guests come, and assemble the potato croquettes and stuffed mushrooms in morning and later saute potatoes and bake the stuffed mushrooms while DH grills the steaks.

6 mushrooms, large
2 teaspoons olive oil
2 garlic cloves, minced
1/2 cup frozen chopped spinach, thawed and well drained-squeezed dry
3 ounces feta cheese, crumbled
1 slice white bread, made into crumbs
1 tablespoon egg substitute
1/4 teaspoon oregano

Steps:

  • Remove and chop stems of mushrooms, reserving the caps.
  • In 9" skillet, heat olive oil, add garlic and cook over medium high heat until softened, about 1 minute.
  • Add chopped mushrooms and spinach, cook, stirring frequently, until moisture has evaporated, about 3 minutes.
  • Transfer spinach to medium sized mixing bowl; add cheese, bread crumbs, egg substitute, oregano, and pepper; stir to combine.
  • Fill each reserved mushroom cap with an equal amount of spinach (you probably will not use all the spinach mixture); arrange in 1 quart casserole.
  • (At this point, you might refrigerate it for later.).
  • Put 2 tablespoons water into bottom of casserole and bake at 375 degrees for 20 minutes, or until mushrooms are tender and lightly browned.

1 package stouffer frozen spinach souffle, defrosted
2 tablespoons butter or 2 tablespoons margarine
3 tablespoons chopped onions
1 clove garlic, crushed
3/4 cup water or 3/4 cup chicken broth
2 1/3 cups herb stuffing mix (not crouton style)
1/2 lb bulk sausage, thoroughly cooked,drained and crumbled (I use breakfast sausage)
1/4 cup parmesan cheese, plus additional for garnish
2 1/2-3 lbs whole white mushrooms, stems removed and chopped

Steps:

  • Melt butter in medium saucepan; add onion, garlic and mushroom stems, cook until onion is translucent.
  • Add water (or broth); heat to boiling.
  • Remove pan from heat.
  • Add stuffing mix and stir until moistened.
  • Stir in souffle, cooked sausage and 1/4 cup parmesan cheese.
  • Stir well.
  • Arrange mushrooms on baking sheet and fill with spinach mixture, mounding slightly.
  • Sprinkle with additional parmesan cheese.
  • Bake in a preheated 400 degree oven for 10- 15 minutes or until cheese and mushrooms are lightly browned.
  • Enjoy.

16 ounces frozen chopped spinach (thawed and drained)
4 large portabella mushrooms (cleaned and stems removed)
2 garlic cloves (minced)
4 tablespoons onions (minced)
2 tablespoons cream cheese
1/2 cup monterey jack cheese
1/4 cup heavy cream
4 ounces crabmeat (1 king crab leg)
salt and pepper
1/2 tablespoon butter

Steps:

  • Melt butter in a sauce pan on medium heat. Add the onion and garlic and saute for 5 minutes.
  • Add the spinach, the cream cheese, and the heavy cream and continue to cook on medium heat until the cream cheese is melted.
  • Add the monterrey jack cheese and salt and pepper to taste.
  • Finally, tear the crab meat into small chunks and gently fold the meat into the spinach mixture.
  • Spoon the spinach mixture into the mushroom caps and place them on an oiled baking sheet.
  • Bake the mushrooms on 375 for 20 minutes.

1 onion, diced
2 cups packed Baby Spinach

1 pinch red pepper flakes

1/2 cup shredded mozzarella cheese

Steps:

  • Wipe clean mushrooms.
  • Remove stems and dice them.

1 (12 ounce) bag Baby Spinach
5 tablespoons parmesan cheese
3 tablespoons breadcrumbs
2 tablespoons extra virgin olive oil
1 dash garlic powder
salt and pepper
6 baby portabella mushrooms, stem removed

  • Preheat oven to 350°F.
  • Wilt fresh spinach on the stove top; drain.
  • Add wilted spinach and other ingredients into food processor, mix together until well blended, (try the mixture at this point to determine whether you would like to add more flavour/any other ingredient).
  • Remove mixture with a spoon and put into a cleaned mushroom cap. Continue until no more mixture and mushroom caps.
  • Put mushrooms onto a baking sheet that is drizzled with a little extra virgin olive oil.
