Time 2h20m

Yield 30 serving(s)

Number Of Ingredients 8

1 (6 ounce) package Stove Top stuffing mix, Monterey Style with Mushroon & Onion
1 2/3 cups hot chicken broth
1/4 cup butter
2 (10 ounce) packages frozen chopped spinach, thawed and drain
2 cups grated parmesan cheese
1 cup chopped fresh mushrooms
1 small onion, finely diced
3 -4 eggs

Steps:

  • Heat oven to 400°F.
  • Mix stuffing, water and butter in a large bowl. Add all additional ingredients and mixed until well blended.
  • Shape into 60 balls, about 1 inch across.
  • Place in a single layer on a greased baking sheet. Chill 2 hours.
  • Bake 15 to 20 minutes or until lightly browned.

Tips:

  • Choose fresh spinach: Fresh spinach leaves yield the best flavor and texture for the stuffing balls. Look for leaves that are deep green and free of blemishes.
  • Squeeze out excess water: After washing the spinach, be sure to squeeze out as much excess water as possible. This will help prevent the stuffing balls from becoming soggy.
  • Use a variety of cheeses: Using a combination of cheeses, such as Parmesan, mozzarella, and ricotta, adds depth and richness to the stuffing balls.
  • Season the stuffing well: Don't be afraid to season the stuffing generously with salt, pepper, and other herbs and spices. This will help bring out the flavors of the spinach and cheese.
  • Form the stuffing balls gently: Be gentle when forming the stuffing balls to prevent them from breaking apart. Use your hands to lightly pack the stuffing mixture together, then roll it into balls.
  • Bake or fry the stuffing balls: You can either bake or fry the stuffing balls, depending on your preference. Baking them will result in a crispy exterior and a soft and fluffy interior, while frying them will give them a golden brown crust.

Conclusion:

Spinach stuffing balls are a delicious and versatile dish that can be served as an appetizer, side dish, or main course. They're easy to make and can be tailored to your own taste preferences. With their combination of fresh spinach, creamy cheese, and savory seasonings, these stuffing balls are sure to be a hit with everyone who tries them.
