Time 7m

Number Of Ingredients 6

olive oil
2 cups fresh spinach
6 grape tomatoes
2 large eggs
1 tablespoon water
salt and pepper (to taste)

Steps:

  • Drizzle olive oil into a nonstick skillet over medium heat. Add spinach and tomatoes and cook until the spinach just begins to wilt. Meanwhile, whisk together eggs and water until foamy. Pour eggs into skillet with spinach.
  • Do not stir the eggs until the sides have begun to turn a lighter shade than the rest of the eggs and have begun to gently pull away from the buttered edges of the pan. Using a silicon spatula or a wooden spoon, gently pull the eggs toward the center of the skillet, bringing large curds with you as you do so. The edges here you pulled the eggs toward the center will quickly fill with uncooked egg mixture.
  • Continue to pull the curds toward the center of the entire skillet and gently stir the eggs until there is no more visible uncooked eggs. Stir eggs gently and remove from heat. Be sure not to leave eggs on the heat too long as they can quickly overcook and become dry and rubbery.
  • Salt and pepper to taste and serve immediately.

Tips:

  • Use fresh ingredients: Fresh spinach, tomatoes, and eggs will give your scramble the best flavor and texture.
  • Don't overcrowd the pan: If you add too much spinach and tomatoes to the pan, they will not cook evenly and the scramble will be watery.
  • Cook the spinach and tomatoes first: This will help to remove excess moisture and prevent the scramble from becoming watery.
  • Use a non-stick pan: This will help to prevent the scramble from sticking and burning.
  • Cook the scramble over medium heat: This will help to prevent the eggs from overcooking and becoming rubbery.
  • Season the scramble to taste: Add salt, pepper, and other seasonings to taste.
  • Serve the scramble immediately: This is when it is at its best flavor and texture.

Conclusion:

Spinach, tomato, egg, and cheese scramble is a delicious, healthy, and easy-to-make breakfast or brunch dish. It is packed with protein, vitamins, and minerals, and it can be customized to your liking. With just a few simple ingredients and a few minutes of your time, you can enjoy a delicious and satisfying meal.
