1 teaspoon butter or 1 teaspoon margarine, softened
1 cup whipping cream
1/3 cup milk
1 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, crushed
6 medium potatoes
1 cup shredded swiss cheese (4 ounces)
1/4 cup shredded parmesan cheese

Steps:

  • Grease a shallow 1-1/2 quart baking dish with the butter; set aside.
  • In a saucepan, combine cream, milk, salt, pepper and garlic.
  • cook just until bubbles begin to form around sides of pan.
  • Remove from the heat; cool for 10 minutes.
  • Peel and thinly slice the potatoes; pat dry with paper towels.
  • Layer half of the potatoes in prepared baking dish; top with half of the cream mixture and half of the cheeses.
  • Repeat layers.
  • Bake, uncovered, at 350 for 55-65 minutes or until poatotes are tender.
  • Let stand for 5-10 minutes before serving.

1 cup milk

Steps:

  • Preheat oven to 350°F (180°C).
  • In a small pot, melt the butter and fry the garlic until it's just starting to brown. Add the flour, salt and pepper. whisk until there are no lumps.

  • Bring to a boil, then remove from heat.

1 small onion, finely chopped (1/3 cup)

4 lbs medium russet potatoes

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
