Tips:

  • For the perfect flaky crust, use a combination of butter and shortening. Butter adds flavor, while shortening helps keep the crust tender and flaky.
  • Use a pastry blender or two forks to cut the butter and shortening into the flour until the mixture resembles coarse crumbs.
  • If the dough is too dry, add a tablespoon or two of ice water until it just comes together.
  • Wrap the dough in plastic wrap and chill for at least 30 minutes before rolling it out.
  • To prevent the crust from shrinking, trim the edges and prick the bottom of the dough with a fork.
  • Bake the crust at a high temperature (425°F) for 15-20 minutes, or until golden brown.
  • For the filling, use ripe, juicy peaches and pears. Peel and slice the fruit and toss it with sugar, cornstarch, lemon juice, and spices.
  • Pour the filling into the prepared crust and bake at 350°F for 45-50 minutes, or until the filling is bubbling and the crust is golden brown.
  • Let the pie cool completely before serving. Serve with whipped cream, ice cream, or a dollop of yogurt.
