10 cups spring mixed salad greens
1/2 cup sliced olive
1 large red onion, sliced
1/2 cup chopped green onion
1/2 cup chopped celery
1 cup chopped cherry tomatoes
1/2 cup feta cheese
1/4 cup grated parmesan cheese
mushroom, drained
1 cup dry chow mein noodles
1/2 cup extra virgin olive oil
4 tablespoons lemon juice
1 tablespoon ground sumac
1 teaspoon garlic powder
1 teaspoon oregano
1 tablespoon olive juice
1 tablespoon feta cheese, Juice

Steps:

  • In a large salad bowl, mix all Salad ingredients, except Dry Chow Mien Noodles and Parmesan Cheese.
  • In a glass Mason Jar mix all salad dressing ingredients.
  • Shake well.
  • Poor dressing over salad, lightly coating.
  • Sprinkle Parmesan Cheese over salad, lightly coating.
  • Toss salad.
  • Top with Chow Mien Noodles.
  • Serve immediately.

One of my favorite lunch spots is a charming little Iraqi restaurant that makes the best food! The first time I tried this salad, I just knew I had to try and recreate it at home. The tangy lemon and sumac flavors make this salad super refreshing and perfect for summer. This makes 2 lunch-sized portions, or 4 side salads.

2 medium Roma tomatoes
½ large English cucumber, peeled and seeded
½ medium red onion
½ cup minced fresh parsley
1 teaspoon ground sumac
½ teaspoon salt
2 cups packed fresh arugula
2 tablespoons fresh lemon juice
1 tablespoon olive oil

Steps:

  • Cut tomatoes lengthwise into quarters and gently give them a squeeze to remove some of the seeds and excess liquid. Slice the tomatoes thinly and place into a large bowl.
  • Cut cucumber into 1/4-inch pieces and add to the bowl. Cut onion into 1/4-inch slivers and add to the bowl with parsley. Sprinkle with sumac and salt and toss to coat. Let sit for at least 15 minutes for flavors to meld, the longer the better.
  • Add arugula to the bowl and drizzle with lemon juice and olive oil. Toss to coat and adjust salt if needed. Serve immediately.

6 -8 handfuls mixed salad greens, washed and dried well (or butter lettuce)
1 -2 medium orange, sectioned, pith removed, cut in half
1 avocado, thinly sliced
1/2 cup toasted nuts (sliced almonds, pine nuts, walnuts, etc)
1/2 cup sliced spring onion (scallions, or green onions)
parmesan cheese, shavings to garnish
1/3 cup freshly grated parmesan cheese
2 oranges, zest and juice of
2 tablespoons chopped shallots (or red onion, or scallions)
2 tablespoons red wine vinegar
1 cup extra virgin olive oil
1/4 teaspoon lemon juice
2 pinches salt
2 pinches pepper

Steps:

  • Salad:.
  • Wash and dry salad greens well and place them in a large bowl.
  • Add orange pieces, nuts, and onions.
  • Toss well with the Citrus Parmesan Dressing .
  • Add the avocado and toss the salad gently, so as not to mush the avocado.
  • Sprinkle with some Parmesan shavings(using a vegetable peeler).
  • Citrus Parmesan Dressing:.
  • In a bowl combine the grated Parmesan, orange zest and juice, and the shallots.
  • Whisk in the red wine vinegar.
  • Whisk in the olive oil and finish by seasoning with salt and pepper.
  • Or you may use a jar and shake the dressing.
