A delicious side dish with the turkey at Thanksgiving. Very light and spicy. We use Hubbard Squash but any winter squash would work. Easily prepared in advance and baked later. Time does not include cooking and mashing squash.

3 tablespoons butter
1 cup milk
1 cup dry breadcrumbs
2 cups cooked squash, mashed
1 tablespoon grated onion
1 teaspoon salt
fresh ground pepper
2 eggs
1/2 cup buttered bread crumb, for topping
1 tablespoon minced pimentos

Steps:

  • Preheat oven to 350.
  • Melt butter in hot milk and pour over the bread crumbs. Mix well and add squash, onion, pimento and seasonings.
  • Beat eggs and add to squash mixture.
  • Pour into a greased 2-quart casserole and cover with buttered bread crumbs.

1 small Vidalia onion, chopped (about 3/4 cup)
Water
2 pounds yellow squash, cut into 1/2 to 1-inch cubes
Kosher salt and freshly cracked black pepper
1 cup good quality mayonnaise
1 1/2 cups grated Gruyere cheese
1 1/4 cups crushed butter crackers, divided

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heated skillet, cook the onions, adding a little water to prevent them from burning. Cook until lightly brown, adding more water, if needed. Add the squash, season with salt and pepper, to taste, and cook until the squash is tender, about 8 to 10 minutes. Remove the skillet from the heat and stir in the mayonnaise, 1 cup of the cheese and 1 cup of the crumbled crackers. Pour the mixture into a 1 1/2-quart baking dish. Sprinkle with remaining cheese and top with remaining 1/4 cup of butter crackers. Bake until the casserole is bubbly around edges, about 25 minutes. Remove the casserole from the oven and serve hot.

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. 2 tablespoons butter, divided
2 cups thinly sliced zucchini
2 cups thinly sliced yellow squash
1 (8 ounce) package baby bella mushrooms, sliced
1 small white onion, thinly sliced
2 cloves garlic, minced, or more to taste
1 (5 ounce) package baby spinach leaves
2 cups crushed buttery round crackers (such as Ritz®)
½ cup butter, melted
2 plum tomatoes, seeded and thinly sliced
1 (4 ounce) jar diced pimento peppers, drained
½ cup mayonnaise
¼ cup sliced green onion
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 cup shredded sharp Cheddar cheese
1 cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt 1 tablespoon butter in a large saucepan over medium heat. Add zucchini and yellow squash; cover and cook, stirring occasionally, until soft, 6 to 10 minutes. Drain and set aside.

I love spaghetti squash and am always looking for new ways to use it. This recipe uses low-fat ingredients but could easily be converted to full-fat if you wish. Other spices or herbs can be added to dress it up; this is just the basic recipe.

3 cups cooked spaghetti squash (1 large)
1/4 cup chopped bell pepper
1/3 cup chopped onion
1/4 cup water chestnut
1 tablespoon diced pimento (or sub diced roasted red peppers or sundried tomatoes)
1/2 cup grated low-fat cheddar cheese
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 cup egg substitute (or 2 eggs, well beaten)
1/2 cup low-fat sour cream
1/2 cup 2% low-fat milk
1/4 cup panko breadcrumbs, crumbs or 1/4 cup breadcrumbs
1 teaspoon paprika

Steps:

  • Preheat oven to 350º.Coat an 8-inch by 8-inch baking dish with cooking spray.
  • Cut the squash in half lengthwise, scoop out and discard seeds, place cut-side down on a baking sheet and bake for 25 minutes. ( Or place cut side down on a microwave safe dish, poke holes in peel & nuke until tender ).
  • When squash is tender, scoop out the meat with a fork. (you may only need 1 half to get 3 cups, depending on the size of your squash).
