Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 1 quart casserole dish.

1/4 cup extra-virgin olive oil
Sea salt
Freshly ground black pepper
1 dried red chili, crumbled
6 slices country bread (optional)
1 clove garlic (optional)

Steps:

  • Heat a broiler or grill. Set the cooking rack 3 inches from the heat.
  • Place the tomatoes on a rimmed baking pan. Broil until they soften and the skins start to blister and split, about 2 minutes. Using tongs, flip the tomatoes and broil until blistered but not totally soft, 2 minutes more.
  • Transfer the tomatoes to a serving dish and lightly squash with a fork so some of the juices run out. (Be careful to avoid spattering.) 2 small butternut or acorn squashes (no larger than 1 1/4 to 1 1/2 pounds each), halved lengthwise and seeded
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 teaspoon fresh thyme leaves, plus 6 sprigs
2 cups cherry tomatoes (11 ounces), stem-on, if desired
2 teaspoons chile paste, such as sambal oelek, plus more for serving
4 large eggs

Steps:

  • Preheat oven to 425 degrees with racks in upper and lower thirds. Line 2 baking sheets with foil. Rub squashes all over with 1 tablespoon oil. Season with salt and thyme leaves, then place, cut-sides down, on a baking sheet. Add thyme sprigs. Place on upper rack; roast 10 minutes.
  • Meanwhile, toss tomatoes in remaining 1 tablespoon oil; season with salt. Spread on second sheet in a single layer. Place on lower rack; roast until tomatoes are beginning to collapse and squashes are tender, 20 to 25 minutes more.

1 small head broccoli
300 g egg noodles (4 small blocks)
1/2 tablespoon peanut oil
2 cups large shelled prawns, raw
2 tablespoons minced fresh garlic cloves
3 cups cherry tomatoes (approx 400g)
1 cup dry white wine
fresh ground black pepper
sea salt

Steps:

  • Cut the florets from the broccoli into bite-sized pieces and set aside. Slice off and discard any rough pieces from the remaining stalk then slice into small pieces.
  • Cook the noodles in a pan of boiling water according to packet instructions. Add the broccoli for the final minute of cooking. Drain.
  • Meanwhile, heat a wok or large non-stick frying pan until hot. Add the oil, prawns and garlic and fry for 1-2 minutes, until the prawns turn pink. Remove from the pan and set aside.
  • Add the tomatoes and squash down with the back of a spatula to release the juices. Cook for 1-2 minutes then add the wine and bubble for 1 minute. Return the prawn mixture to the pan, season with salt and pepper then toss through the drained noodles and broccoli.

1/4 lb chopped bacon
1/2 cup chopped onion
1/2 cup chopped celery
1 cup green onion, chopped (tops and bottoms)
1 1/2 cups tomatoes, chopped
1/2 cup cream of mushroom soup
1/2 cup breadcrumbs
1 cup shredded American cheese
salt and pepper, to taste (or any favorite seasoning)

  • Fry the bacon until crisp.

1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use

1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced

freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
  • Add the remaining olive oil to the pan, then the garlic. Cook, stirring, just until fragrant -- less than 30 seconds. Stir in the tomatoes. Cook, stirring often, until the zucchini is tender and translucent and the tomatoes have cooked down to a fragrant sauce. Stir in the basil, and taste and adjust seasonings. Remove from the heat and serve hot, or allow to cool and serve at room temperature.
