Time 1h30m

Yield 2 loaves, 24 serving(s)

Number Of Ingredients 14

2 cups sugar
1 cup vegetable oil
3 eggs
2 teaspoons vanilla
2 cups shredded zucchini
1/2 cup applesauce
1/3 cup orange juice
3 cups flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
3/4 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1 cup chopped walnuts

Steps:

  • Preheat oven to 350*.
  • In large bowl, mix sugar, oil, eggs, and vanilla.
  • Beat until well blended.
  • Add zucchini, applesauce and orange juice; stir well.
  • Combine flour with next 5 ingredients.
  • Add to zucchini mixture; stir well.
  • Add nuts; stir gently to combine.
  • Pour into 2 greased and floured 9in loaf pans.
  • Bake for 60-70 minutes; till toothpick comes out clean.
  • Let cool in pans 10 minutes.
  • Remove from pans and let cool completely.

Tips:

  • Choose firm and medium-sized zucchinis. Avoid large ones, as they tend to be watery.
  • Grate the zucchini with a box grater or a food processor. Make sure to squeeze out any excess moisture using a cheesecloth or paper towels.
  • Measure the grated zucchini properly. Too much zucchini can make the bread dense and soggy.
  • Use all-purpose flour for a classic zucchini bread texture. For a healthier option, you can substitute whole wheat flour or almond flour.
  • Don't overmix the batter. Overmixing can result in a tough and dense bread.
  • Bake the bread at the right temperature and for the right amount of time. A toothpick inserted in the center should come out clean when the bread is done.
  • Let the bread cool completely before slicing and serving. This will help it hold its shape and prevent it from crumbling.

Conclusion:

With its moist and flavorful texture, zucchini bread is a versatile treat that can be enjoyed for breakfast, lunch, or as a snack. Experiment with different ingredients and flavors to create your own unique zucchini bread recipe. Whether you prefer a classic version or something more adventurous, there's a zucchini bread recipe out there to satisfy your taste buds.
