Earlier this summer, I made a bunch of different pizzas for my new cookbook. In the spirit of impatience, I'm sharing one of them with you today.

1 tsp. (scant) Active Dry Yeast
3/4 c. Warm Water
2 c. All-purpose Flour
3/4 tsp. Kosher Salt
3 tbsp. Olive Oil

Steps:

  • Sprinkle yeast over 3/4 cups warm (not lukewarm) water. Let stand for a few minutes.In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass.Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.Note: it's best to make the dough at least 24 hours in advance.

1 loaf (1 pound) frozen pizza dough, thawed
1 package (8 ounces) frozen spinach and artichoke cheese dip, thawed
3/4 cup grape tomatoes, halved
1 boneless beef top loin steak (1 pound), thinly sliced
1-1/2 teaspoons Montreal steak seasoning
1/3 cup torn fresh basil
3 tablespoons pine nuts
2 bacon strips, cooked and crumbled
1/3 cup prepared ranch salad dressing
1 tablespoon prepared horseradish

Steps:

  • Preheat oven to 400°. Press dough to fit a greased 14-in. pizza pan. Pinch edges to form a rim. Bake until edges are lightly browned, 10-12 minutes. Let cool 10 minutes., Spread with dip; top with tomatoes. Toss steak with steak seasoning; place over tomatoes. Bake on a lower oven rack until steak reaches desired doneness and crust is golden brown, 10-12 minutes. Let stand 10 minutes. Sprinkle with basil, pine nuts and bacon. Combine dressing and horseradish; serve with pizza.

3/4 cup pizza or BBQ sauce
5 ounces beef steak (brisket, flank steak or sirloin), cut into 1-inch pieces

1 to 2 tablespoons dried oregano, optional

  • Preheat the oven to 400 degrees F.
  • Stretch the crust over a 14-inch pizza pan. Evenly spread the sauce over the crust. Arrange the steak and red onions over the sauce. We love our pizza ovens for turning out beautifully charred, ready-in-90-seconds pizzas, but they can do much more than that. They roast veggies in no time, bake fish fillets to moist perfection and even cook steaks like a pro. Here's our method for the latter. While cooking the meat twice may seem unusual, it's a method used by some of the country's oldest and best steakhouses. The blast of high heat at the beginning caramelizes the exterior; slicing the meat, basting with butter and then returning it to the oven adds flavor and moisture while it evenly cooks to your preferred level of doneness.

Two 1 1/2-inch-thick New York strip steaks
6 tablespoons unsalted butter, at room temperature
Kosher salt and coarsely ground black pepper

Steps:

  • Preheat the pizza oven for 15 minutes.
  • Meanwhile, rub the steaks all over with 1 tablespoon of the butter each, then season generously with salt and pepper.
  • Put a medium cast-iron skillet in the pizza oven and let it heat for 5 minutes. Place the steaks in the skillet, return the skillet to the oven and cook until there is a dark brown crust on the bottom of the steaks, 2 to 5 minutes. Flip the steaks and cook until the other side develops a dark brown crust, 2 to 5 minutes more.
  • Transfer the steaks to a cutting board with tongs, reserving the skillet. Holding the steaks in place with the tongs, cut 1/2-inch-thick slices crosswise. Transfer the steaks back to the skillet, pushing the slices together so they all touch. Spread 2 tablespoons of the butter on top of each steak and return to the oven.
  • Cook to your desired temperature, basting with the melted butter halfway through. For reference, medium rare was about 2 minutes more for us, but it may vary based on your oven's temperature.

"STEAK AND EGG" SKILLET PIZZA

1 pound pizza dough, thawed if frozen, divided in half
5 teaspoons extra-virgin olive oil
10 ounces sirloin steak (1 inch thick)
Coarse salt and ground pepper
1 medium red onion, thinly sliced
2 bell peppers (not green), stemmed, seeded, and thinly sliced lengthwise
4 ounces Monterey Jack cheese, shredded (1 cup)
1/4 cup coarsely chopped fresh parsley leaves

Steps:

  • Preheat oven to 500 degrees, with racks in upper and lower thirds. On a lightly floured surface, roll out 1 dough half into a 14-inch oval. Transfer dough to a parchment-lined baking sheet and brush with 1 teaspoon oil. Repeat with remaining dough half. 1 tablespoon olive oil

1 regular pizza crust (store bought or homemade)
1 bag Provolone cheese
White American cheese
1/2 lb steak (I chose Rib Steak)sliced thin
1 small can Campbell's beef gravy (or homemade)
1/2 cup water
1/8 teaspoon salt
1/2 large onion (sliced)
1 8oz can sliced mushrooms (or fresh)

Steps:

  • Prepare your pizza crust. Do not cook just yet. Slice steak as thinly as possible into strips. Add strips to your pan and brown them. Now deglaze the pan with ½ cup of water, add 1/8 teaspoon of salt and simmer until there's just enough liquid to coat the meat. Scrape the brown residue off the bottom of the pan and toss the meat with it. In a separate pan sauté mushrooms and onions as needed. Line your pizza crust with a thin layer of white American cheese and top with a thin layer of Campbell's beef gravy. Bake pizza crust until it's almost done. Take out of the oven and pile with steak, mushrooms, onions, and provolone cheese. Put back in the oven and finish cooking.
