3/4 cup diced smoked ham
3/4 cup chopped red bell pepper
2 garlic cloves, minced
1/4 teaspoon dried crushed red pepper
18 1/2-inch-thick baguette slices
Olive oil
5 pounds littleneck clams (35 to 40), scrubbed

4 ounces bottled clam juice

1/4 cup chopped green onion
sourdough bread

Tips:

  • Clean the clams thoroughly: Scrub the clams under cold running water to remove any dirt or grit. Then, soak the clams in a bowl of cold water for 30 minutes to allow them to吐出沙子。
  • Use a large pot: The clams will produce a lot of steam, so it's important to use a pot that is large enough to accommodate them.
  • Don't overcrowd the pot: If you overcrowd the pot, the clams will not steam evenly and will take longer to cook.
  • Season the clams simply: A few simple ingredients, such as garlic, ginger, and lemongrass, are all you need to enhance the natural flavor of the clams.
  • Garnish with fresh herbs: Fresh herbs, such as Thai basil and cilantro, add a pop of color and flavor to the dish.
