GARLIC MASHED CAULIFLOWER
This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

STEAMED MASHED CAULIFLOWER
Steamed head of cauliflower without butter, milk, extra calories, or carbs. Very light, very tasty. My 12-year-old child is very picky, but absolutely loves my faux mashed potatoes as they are very similar in texture and taste to the real thing. As an extra we've even added roasted garlic cloves. Heavenly!

This is our choice for a side dish that's lower in carbs than mashed potatoes but just as flavorful and satisfying. I suggest garnishing it with chopped green onions. -Tina Martini, Sparks, Nevada

CREAMY MASHED CAULIFLOWER
This is a low-carb stand-in for mashed potatoes. The spices and cream that are added to steamed and pureed cauliflower give this dish the taste, texture and appearance of mashed potatoes. Serve this up with any entrée that goes well with mashed potatoes, and I swear you'll never miss the spuds.
