3 lb sweet potato, peeled and cut into large chunks
2 lb russet potato, peeled and cut into large chunks
cold water
1 tablespoon kosher salt, plus more to taste
½ cup unsalted butter, cubed
½ cup heavy cream
½ cup whole milk
freshly ground black pepper, to taste
1 tablespoon fresh chives, chopped, for garnish

MASHED SWEET POTATOES

Mashed Sweet Potatoes image

Believe it or not, not everyone wants their sweet potatoes topped with marshmallows or brown sugar. For them, here is a straightforward dish that lets the natural, earthy sweetness of sweet potatoes shine.

Provided by Robert Farrar Capon

Categories     dinner, easy, vegetables, side dish

Time 1h45m

Yield 8 servings

Number Of Ingredients 4

2 1/2 pounds sweet potatoes (about 8 sweet potatoes)
1 to 2 sticks unsalted butter, at room temperature, plus more to taste
Kosher salt and black or white pepper
Flaky sea salt, for serving (optional)

Steps:

  • Heat the oven to 350 degrees. Bake the sweet potatoes for 1 to 1 1/2 hours, or until thoroughly fork tender. (If you're making these for Thanksgiving, you can tuck the potatoes into corners of the oven at any time during the roasting of the turkey.)
  • Cut each potato in half lengthwise, scoop the pulp into a bowl and mash with as much butter as you dare to use. Season to taste with salt and pepper. Add more butter, if desired. Sprinkle with flaky sea salt, if using. Serve while still warm or reheat before serving.

STEVE'S (NOT MASHED) SWEET POTATOES

Steve's (Not Mashed) Sweet Potatoes image

My husband's cousin prepared the sweet potatoes this way for a family reunion type Thanksgiving a couple of years ago. We love them for a change of pace from candied yams and sweet potato casseroles, and they are oh so much better for you.
