1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon stevia, concentrate powder
1/4 cup walnuts (chopped)
2 eggs
1/4 cup unsweetened applesauce
1 1/2 cups carrots (grated)
1/2 cup zucchini (grated)
1/2 cup half-and-half
1 cup plain fat-free yogurt
1 tablespoon pumpkin spice

Steps:

  • Cream all moist ingredients together except eggs.
  • Add stevia and mix well.
  • Add eggs mixing well.
  • Then add the remaining ingredients and stir.
