8 tablespoons (1 stick) butter
2 pounds onions, sliced
1 pound mushrooms, sliced
1 2-pound jar sauerkraut, well drained
1 tablespoon all purpose flour
2/3 cup (or more) water
2 dozen purchased frozen pierogies (such as potato-and-onion or cheese)
Sour cream

Steps:

  • Melt 2 tablespoons butter in heavy large Dutch oven over medium-high heat. Add onions; sprinkle with salt and pepper. Sauté until golden brown, about 30 minutes. Add mushrooms and sauté until tender, about 10 minutes. Mix in sauerkraut and flour. Mix in 2/3 cup water. Cover pot, reduce heat to medium and simmer until sauerkraut is tender and mixture is thick, stirring occasionally and adding more water by tablespoonfuls if mixture seems dry, about 20 minutes. Mix in 2 tablespoons butter. Season generously with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
  • Meanwhile, cook pierogies in large pot of boiling salted water until heated through, about 6 minutes. Drain; transfer to large bowl and toss with remaining 4 tablespoons butter.
  • Spoon sauerkraut mixture into large shallow bowl. Top with pierogies. Serve with sour cream.

2 tablespoons snipped fresh dill
1 tablespoon all-purpose flour

Steps:

2 tablespoons vegetable oil
2 tablespoons unsalted butter
3 ounces smoked thick slab bacon, cut into 1/2-inch strips
1 medium onion, sliced
1 garlic clove, finely minced
2 -3 lbs beef round steak, and cut into 1-inch cubes (with some fat) or 2 -3 lbs chuck stew meat, cut into 1-inch cubes (with some fat)
20 white pearl onions, blanched for 1 minute and peeled
3/4 lb white mushrooms or 3/4 lb a combination of shiitake and cremini mushroom, cleaned, trimmed, and quartered
3 tablespoons all-purpose flour
salt & freshly ground black pepper
3 cups hearty red wine, such as a French Bordeaux or 3 cups a california Burgundy wine
1/4 cup cognac
1 sprig fresh thyme, 2 sprigs parsley, and 1 large bay leaf tied together with kitchen string
2 tablespoons finely minced fresh parsley, for garnish

Steps:

  • In a large enameled Dutch oven, heat 1 tablespoon of the vegetable oil and 1 tablespoon of the butter over medium heat until hot but not smoking. Add the bacon and saute over medium heat for 5 minutes. Add the sliced onion and cook, stirring, until wilted, 3 minutes. Finally, add the garlic, cook 1 minute longer, and remove from the heat.

1/4 teaspoon fresh marjoram
1 pound frozen gnocchi (store bought) cooked
Salt and pepper
1 large onion, sliced
1 celery stalk, chopped
1 carrot, chopped
3 cloves garlic, peeled and smashed
All mushroom stems, washed
1 teaspoon whole black peppercorns
1 bay leaf
Small tied bundle of parsley and thyme
