¾ cup sugar, divided
1 ½ teaspoons finely grated orange zest
¼ cup juice from a large orange
4 eggs, separated
¼ cup instant flour (Wondra)
4 tablespoons fresh lemon juice, divided
1 cup milk
6 tablespoons orange marmalade
2 tablespoons orange-flavored liqueur

Steps:

  • Spray eight 6-ounce ovenproof custard cups (such as Pyrex) with vegetable cooking spray. Set them in two 9-inch round or square baking pans. Bring 1 1/2 quarts of water to boil in a tea kettle. Heat oven to 325 degrees.
  • Whisk butter, 1/2 cup sugar and zest until smooth. Whisk in egg yolks, then flour, until smooth. Next whisk in 1/4 cup orange juice and 2 Tbs. lemon juice, then the milk, to form a thin batter.
  • In a separate bowl, beat egg whites with a hand mixer until foamy. Gradually add remaining 1/4 cup sugar, until the whites are stiff enough to hold a peak. Gently fold the whites into the batter until just smooth.
  • Pour batter into each custard cup. Place pans on oven rack, then carefully pour hot water into each pan, being sure to avoid getting any water on the cakes. Bake until tops are golden brown and spring back to the touch, about 25 to 35 minutes. Remove pans from oven; let custard cups stand in the water until just warm. Place a dessert plate over each custard cup; invert cake onto plate. Mix marmalade, liqueur and remaining 2 Tbs. lemon juice. Spoon sauce over cakes.

This syrupy twist on Christmas pud takes no time to prepare and can be steamed or made in the microwave.

3 tbsp golden syrup
2 clementines or satsumas , thinly sliced
175g butter
175g golden caster sugar
3 eggs , beaten
85g self-raising flour
85g fresh white breadcrumbs
grating fresh nutmeg (about ¼ tsp)
2 tbsp marsala
zest 1 large orange
200g mixed dried fruit
handful glacé cherries , halved
5 tbsp golden syrup
zest 1 orange , juice ½
3 tbsp madeira

Steps:

  • Butter the inside of a 1.2-litre pudding basin. If you're steaming the pudding on the hob, boil the kettle and have a large saucepan with a lid and a heatproof saucer ready. Cut a sheet of foil and greaseproof paper, both about 30cm long, and butter the greaseproof.
  • Spoon 3 tbsp syrup into the bottom of the basin. Lay 5 slices of clementine or satsuma in the bottom, overlapping like petals. In a bowl, beat the butter and sugar until creamy, then add eggs gradually, beating all the while, until light and fluffy. Add a spoonful of flour if the mix starts to split. Tip in the breadcrumbs and the rest of the flour, fold until combined, then add all remaining ingredients and fold again. Spoon mix on top of the fruit slices. Add remaining slices of clementine or satsuma against the side of the bowl as you go.
  • To cook on the hob, cover with greaseproof and foil and steam for 1½ hrs (see Know-how, below). To microwave, losely cover with cling film, pierce once, then cook on Medium for 12 mins. To check it's done, poke a skewer into the pudding; it should come out clean.
  • Make the syrup by heating the ingredients in a small pan. When the pudding is ready, turn out and serve drenched with syrup, or leave to cool and chill for up to 3 days. To reheat, re-cover with foil and greaseproof and steam for 30 mins, or cover with cling film and microwave on Medium for 5 mins until hot. Reheat sauce in the microwave or in a pan.

3 tablespoons golden syrup
2 clementines, thinly sliced
3/4 cup butter
3/4 cup golden caster sugar
3 eggs, beaten
2/3 cup self-raising flour

Steps:

  • Grease a 1.2l microwaveable pudding basin.
  • Spoon the golden syrup into the basin.
  • Decorate the bottom of the basin with 5 of the clementine slices.
  • In a mixing bowl beat the butter and sugar till it takes on a creamy texture.
  • Add eggs one at a time until you a have a light and fluffy mixture.
  • Add one spoonful of flour to this mix.
  • Tip in the rest of the flour and the breadcrumbs.
  • Combine thoroughly.
  • Now add the rest of the ingredients.
  • Line the pudding basin with the sliced clemetines and add the mix carefully.
  • Cover with saran wrap, pierce once and put in the microwave for 12 mins on medium.
  • When it is cooked a wooden skewer should come out clean.
  • You can also make a syrup by heating 5tbsp golden syrup, 3tbsp pf madeira, the zest of one orange and 1/2 of its juice in a saucepan till warmed.
  • This syrup should be poured over the pudding after it has been cooked and removed from the basin.
  • When reheating you should warm the pudding up for 5 mins on medium, until it is piping hot.

1 packet gelatin powder
4 oz cream cheese, room temperature
8 oz mascarpone, room temperature
⅓ cup granulated sugar
1 tablespoon orange zest
1 teaspoon lemon juice

1 tablespoon heavy cream
½ cup Mandarin orange slices, canned, drained, and halved lengthwise

1 box orange flavored gelatin powder
1 cup boiling water

24 ladyfingers, divided, alessi brand

Steps:

  • Make the orange mascarpone cream: In a small bowl, combine the cold water and gelatin, stirring with a fork to dissolve and break up any clumps. Let the gelatin bloom for 5 minutes, until the water is mostly absorbed. Microwave for 15-20 seconds, or until the gelatin is melted.
  • Add the cream cheese to a large bowl. Beat with an electric hand mixer on medium speed until smooth, 1-2 minutes. Add the mascarpone, granulated sugar, orange zest, lemon juice, vanilla, orange liqueur, and heavy cream and mix until light and fluffy, 3-4 minutes.   • Fold the ladyfingers around the edges of the bowl over the cream. (If the ladyfingers are too stiff to fold over easily, use kitchen shears to trim each ladyfingers flush with the orange mascarpone cream, then lay the trimmed pieces on the cream where they would fold over).
  • Cover the pudding with another sheet of plastic wrap. Place a small plate on top and weigh down with a can. Refrigerate for at least 6 hours, up to overnight.
  • When ready to serve the pudding, remove the plate and the can and peel back the plastic. Place a serving platter over the bowl and quickly flip both the bowl and platter over to invert the pudding. Remove the bowl and plastic wrap.
  • Top the pudding with whipped cream and garnish with the mandarin oranges and mint leaves. Slice and serve.
