Yield Makes about 6 cups, serving 6

Number Of Ingredients 13

1 cup finely chopped white and pale green part of leek, washed well and drained
1 large garlic clove, minced
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1 bay leaf
1/2 teaspoon dried thyme, crumbled
2 tablespoons unsalted butter
2 russet baking potatoes (about 1 pound)
3 cups chicken broth

3 tablespoons Tawny Port, or to taste
minced fresh chives for garnish

Steps:

  • In a large saucepan cook the leek, the celery, and the carrot with the bay leaf and the thyme in the butter over moderate heat, stirring, for 5 minutes, or until the vegetables are softened. Add the potatoes, peeled and sliced thin, and the broth and simmer the mixture, covered, for 15 minutes, or until the potatoes are very tender. Discard the bay leaf and in a blender purée the soup in batches. Transfer the purée to the cleaned pan and stir in the half-and-half. Heat the soup over low heat, whisk in the Stilton, whisking until the cheese is melted and the soup is smooth, and whisk in the Port and salt and pepper to taste. (Do not let the soup boil.) Serve the soup garnished with the chives.

BORDELAISE SAUCE WITH MUSHROOMS

Bordelaise Sauce with Mushrooms image

I used to visit the restaurant of a friend who was a chef. He made the best mushroom sauce for beef, but would not share his recipe. After trial and error, I think mine comes very close to his. This haute cuisine sauce makes everyday steaks or roasts into something a little more elegant. Serve atop grilled steaks, hamburger steaks, roasted beef or venison. Bon Appetite!

1 cup beef broth
⅓ cup red wine
1 tablespoon Worcestershire sauce

¼ teaspoon chopped fresh thyme, or to taste
salt and pepper to taste

  • Melt 1 tablespoon of butter in a skillet over medium heat. Stir in the garlic and shallot, and cook until the shallot has softened and turned translucent, about 3 minutes. Tips:

  • Use high-quality ingredients, especially the cheese. A good Stilton cheese will make all the difference in the flavor of the biscuits.
  • Be sure to chill the butter and cheese before grating them. This will help to keep the biscuits light and flaky.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough.
  • Bake the biscuits in a hot oven. This will help them to rise properly and develop a golden brown crust.
  • Serve the biscuits warm with plenty of butter or preserves.

Conclusion:

These Stilton biscuits are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they are also a great way to use up leftover cheese. With their cheesy, flaky texture and slightly nutty flavor, these biscuits are sure to be a hit with everyone who tries them.
