Just when you think dips have about used up all their originality, along comes a recipe like this to convince you otherwise. (Time includes 5 min to crisp the bacon while you prepare the dates) *Enjoy* !

1/2 cup Stilton cheese (or best-quality blue cheese, room temp, crumbled)
2 (8 ounce) packages cream cheese (room temp)
1 dash salt
fresh ground pepper
1 dash cayenne pepper (optional)
3 -5 tablespoons heavy cream
1 cup dates (seeded & sml-diced)
8 slices bacon (thick slice preferred, crisp-fried, crumbled)

Steps:

  • Using an electric mixer (blender or hand-held blender), combine both cheeses w/salt & pepper.
  • When blended, add cream until dip reaches desired consistency.
  • Fold in dates & bacon. Serve w/dippers and/or crackers of choice.
  • NOTE: Altho the recipe did not suggest this, I feel a chill time to allow the flavor to develop would be ideal . & . I think this would be best if allowed to approach room temp b4 being served. My thoughts, but your choices. :-).

12 Medjool dates
2 ounces Stilton cheese, crumbled
6 pieces thick-cut smoked bacon

Steps:

  • Preheat oven to 375 degrees F.
  • Make a lengthwise cut in each date and gently remove the pit, forming a pocket. Fill each date with 1/2 teaspoon cheese. Cut each piece of bacon in half by width. Take a strip of bacon and wrap it around each date, forming a slight overlap on the bottom (cut side up), and place on a rack within a sheet pan. Bake until bacon is crisp and cheese melts, about 25 minutes. Remove from oven and place on a paper towel-lined plate. Allow to cool slightly and serve.

6 clementines
2 tablespoons white balsamic vinegar
2 teaspoons honey
1/4 cup canola oil
1/4 teaspoon salt

3/4 cup crumbled Stilton cheese (3 oz)
1/2 cup coarsely chopped candied walnuts

  • Grate peel from 2 clementines to equal 1 teaspoon. Cut 2 clementines in half; squeeze juice from clementines into measuring cup to equal 2 tablespoons. Peel and slice remaining 4 clementines.
