SZECHWAN EGGPLANT STIR-FRY
Steps:
- Cut the eggplants in 1/2 lengthwise and then slice crosswise into wedges, no more than 1-inch wide.
- Heat a wok or large skillet over medium-high flame and add the oils; tilt the pan to coat all sides. When you see a slight smoke, add a layer of eggplant, stir-fry until seared and sticky, about 3 minutes. Season with salt and pepper. Remove the eggplant to a side platter and cook the remaining eggplant in same manner, adding more oil, if needed.
- After all the eggplant is out of the pan, add the green onions, ginger, garlic, and chile; stir-fry for a minute until fragrant. Add the broth. In a small bowl, mix the soy sauce, vinegar, sugar, and cornstarch until the sugar and cornstarch are dissolved. Pour the soy sauce mixture into the wok and cook another minute, until the sauce has thickened. Put the eggplant back in the pan, tossing quickly, until the sauce is absorbed. Garnish with sesame seeds, Thai basil, and cilantro and serve.

ASIAN EGGPLANT AND NOODLE STIR-FRY
A versatile, quick and easy meat-free, mid-week meal. I use 20ml tablespoons for this recipe. Measure out all ingredients before commencing to cook. Sometimes I saute (then remove) some sliced chicken thigh meat before stir-frying the eggplant, or I add some sliced portobello mushrooms. In this case, use your judgment to increase the amount of the sauce ingredients if necessary. If you don't like chillies, omit. From Delicious magazine.

- Heat 2 more tablespoons of oil in the skillet over medium-high heat, and cook and stir the onions just until they begin to soften, about 30 seconds. Stir in the garlic, and cook and stir an additional 30 seconds. Mix in the soy sauce, water, oyster sauce, chili garlic sauce, sugar, and black pepper, and stir to form a smooth sauce. Return the eggplant to the skillet, lower the heat, and allow the vegetables and sauce to simmer until the eggplant is tender and almost all the liquid has been absorbed, about 5 minutes. Steps:
- Combine all Spicy Sauce ingredients and mix well.
- In a wok or large frying pan, deep-fry eggplant at 350 degrees F for 1 minute. Remove eggplant and drain on paper towels.
- Meanwhile remove all but 1/2 teaspoon of oil from wok. On high heat, stir-fry garlic for 5 seconds then add Spicy Sauce. Reduce heat and let sauce simmer 20 seconds.
- Add eggplant and mix well. Simmer for another 10 seconds. Stir in cornstarch paste a little at a time until desired consistency. Serve immediately.
Tips:
- Choosing the right eggplant: Select tender and young eggplants with smooth, shiny skin. Avoid those with blemishes, bruises, or wrinkles.
- Prepping the eggplant: Cut the eggplant into bite-sized pieces and sprinkle them with salt. Let them sit for 10-15 minutes to draw out the bitterness. Rinse them thoroughly and pat dry before cooking.
- Using the right oil: High-heat cooking oils such as vegetable oil, canola oil, or grapeseed oil are best for stir-frying eggplant.
- Cooking the eggplant: Stir-fry the eggplant over high heat until it is tender and slightly browned. Do not overcrowd the pan, or the eggplant will steam instead of fry.
- Adding other ingredients: Once the eggplant is cooked, add other ingredients such as garlic, ginger, onions, peppers, and sauces. Stir-fry for a few more minutes until everything is well combined.
- Seasoning: Adjust the seasoning to your taste. Typically, stir-fried eggplant is seasoned with soy sauce, oyster sauce, rice vinegar, and sesame oil.
- Serving: Serve stir-fried eggplant immediately over rice or noodles. It can also be served as a side dish or an appetizer.
Conclusion:
Stir-fried Asian eggplant is a delicious and versatile dish that can be enjoyed as a main course, side dish, or appetizer. With its tender texture, savory flavors, and colorful appearance, it is sure to be a hit at your next meal. Experiment with different ingredients, sauces, and seasonings to create your own unique stir-fried eggplant dish.
