1 pound frozen french fries (about 5 cups)
1 1-pound boneless rib-eye steak, thinly sliced
2 tablespoons soy sauce
3 cloves garlic (1 grated, 2 sliced)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1 large red onion, thinly sliced
1/2 jalapeno pepper, chopped (remove seeds for less heat)
8 Campari or other small vine-ripened tomatoes (about 10 ounces), quartered
1 tablespoon red wine vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro

  • Bake the fries as the label directs. Meanwhile, toss the steak with 1 tablespoon soy sauce, the grated garlic and a pinch each of salt and pepper in a bowl; set aside 10 minutes.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the steak in a single layer and cook, stirring once or twice, until browned but not cooked through, about 2 minutes. Transfer to a plate using a slotted spoon.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the red onion and jalapeno and cook, stirring, until slightly softened, about 3 minutes. Add the tomatoes and the sliced garlic; cook until the tomatoes start breaking down, about 3 minutes. STIR-FRIED GARLIC GREEN BEANS

Stir-Fried Garlic Green Beans image

The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

Provided by Martha Rose Shulman

Categories     vegetables, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 8

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

PAN FRIED GREEN BEANS

Pan Fried Green Beans image

These green beans were the side dish my grandmother served most often because we all love them. They are done but not mushy like canned beans.

Provided by Shearyah Hawkins

Categories     Side Dish     Vegetables     Green Beans

Time 30m

Yield 5

Number Of Ingredients 5

1 ½ pounds fresh green beans, trimmed and snapped
garlic powder to taste
onion powder to taste
salt and pepper to taste
3 tablespoons olive oil

Steps:

  • In a stainless steel pot over medium-high heat, combine green beans, garlic powder, onion powder, salt and pepper. Cook, covered, until the beans begin to sweat. Remove lid and stir occasionally until beans are tender.
  • When the beans and spices have begun to 'burn' on the bottom of the pan, which will lend a grilled flavor, stir in the olive oil and turn off heat. Cover, and let stand a few minutes. Scrape the bottom of the pan to incorporate the 'burnt' spices. Beans should have a dark, caramel color, but not black.

Tips:

  • Choose the right beans: For stir-frying, it is best to use young and tender French beans. Avoid using older beans, as they can be tough and fibrous.
  • Trim the beans properly: Trim the ends of the beans and remove any strings. If the beans are long, you can cut them into smaller pieces.
  • Blanch the beans (optional): Blanching the beans in boiling water for a few minutes helps to retain their color and crispness. This step is optional, but it is recommended if you want to achieve a more vibrant dish.
  • Use a well-seasoned wok or pan: A well-seasoned wok or pan will help to prevent the beans from sticking. If you don't have a wok, you can use a large skillet.
  • Use high heat: Stir-frying is a quick-cooking method, so it is important to use high heat. This will help to create a nice sear on the beans and prevent them from becoming soggy.
  • Stir constantly: Stirring the beans constantly will help to ensure that they cook evenly and don't burn.
  • Add the sauce at the end: The sauce should be added towards the end of the cooking process, so that it has time to thicken and coat the beans.
  • Serve immediately: Stir-fried French beans are best served immediately, while they are still hot and crispy.

Conclusion:

Stir-fried French beans is a delicious and healthy dish that is easy to make. With a few simple tips, you can create a flavorful and colorful dish that will be a hit with your family and friends. So next time you're looking for a quick and easy weeknight meal, give stir-fried French beans a try!
