Yield 1 large serving

Number Of Ingredients 23

For the noodles:
3 ounces dried glass noodles
For the cooking sauce:
2 tablespoons tamarind paste
2 teaspoons soy sauce
1 teaspoon Indonesian sweet soy sauce, preferably ABC brand
1 teaspoon oyster sauce (optional)
1 teaspoon sesame oil
1/2 teaspoon hot chili paste
For the garnish sauce:
2 tablespoons Thai chili sauce
1 tablespoon fresh lime juice
1/2 fresh Thai bird chili pepper, seeded and minced
1 clove garlic, minced
To finish and serve:
3 tablespoons canola or other vegetable oil
1 large egg
2 cloves garlic, minced
1/2 cup julienned carrot, in 1 1/2-inch lengths
1/2 cup Chinese garlic chives or other chives, in 1 1/2-inch lengths
1/2 cup trimmed, julienned green beans, in 1 1/2-inch lengths
1 cup bean sprouts
1/2 lime, cut into wedges.

Steps:

  • For the noodles: Soak the dried glass noodles in 4 cups of warm water for 30 minutes. Drain and set aside. While the noodles are soaking, prepare the cooking sauce and the garnish sauce.
  • For the cooking sauce: In a small bowl, mix the tamarind paste with 3 tablespoons water. Using a metal spoon or your fingers, break the tamarind into small pieces to infuse the water. Allow to sit for a few minutes. Place a small strainer over a clean bowl, and strain the tamarind mixture, squeezing on it to remove all liquid; discard the solids. There will be 1 to 1 1/2 tablespoons of a slightly thick liquid. Add the soy sauce, sweet soy sauce, oyster sauce, sesame oil, and hot chili paste. Mix well, and set aside.
  • For the garnish sauce: In a small bowl, mix together the chili sauce, lime juice, minced fresh chili, and garlic. Set aside.
  • To finish and serve: Place a wok or large sauté pan over medium-high heat. Add 2 tablespoons of the canola oil, and heat until shimmering. Add the egg, and when the bottom and edge are starting to form a crust, flip it, and stir fry until golden and almost crisp, breaking into rough strands. Add remaining 1 tablespoon oil. Add garlic and cook until fragrant but not brown, about 30 seconds. Add carrot, chives and green beans and stir-fry until crisp-tender, 1 to 2 minutes. Add noodles and continue to stir vigorously to keep the noodles from sticking, about 2 minutes. Add cooking sauce and bean sprouts; toss well and stir-fry for 1 to 2 minutes. Drizzle the garnish sauce on top of the noodles as desired, and serve with lime wedges on the side.

Time 1h

Yield 4 small appetizer servings, or 2 generous servings

Number Of Ingredients 24

For the dressing:
1/4 cup sugar
1/3 cup soy sauce
1/2 cup fresh lime juice
1 clove garlic, minced
2 red Thai bird chilies, seeded and minced
For the salad:
6 ounces rice vermicelli noodles
1/2 cup vegetable oil
1 pound firm tofu
2 cloves garlic, minced
1 cup baby bok choy or napa cabbage, chopped in pieces 1 1/2 inches by 1/2 inch
1 cup fresh shiitake mushrooms, stemmed, and cut into slender strips
1 tablespoon seeded chopped red Thai bird chilies
2 cups mung bean sprouts
1/2 cup scallions, trimmed and cut into 1 inch lengths
1 tablespoon soy sauce
2 cups red leaf lettuce, cut into 3/4 inch strips
1 teaspoon sesame oil
1/4 cup mint, minced
1/4 cup cilantro, minced, plus 8 cilantro sprigs, for garnish
1/4 cup Thai basil, minced
1 cup julienned, peeled, seedless cucumber
1/3 cup roasted peanuts, chopped, for garnish.

Steps:

  • For the dressing: In a bowl, combine sugar, soy sauce, lime juice and three tablespoons water. Whisk until sugar is dissolved. Add garlic and chilies and let stand for one hour before serving.
  • For the salad: Bring a medium-size pot of water to boil. Turn off the heat. Add the noodles to the water and soak until soft, five to eight minutes. Drain, rinsing under cold water, and drain again. Using scissors, cut the noodles into six-inch lengths. Set aside.
  • In a wok over high heat, add oil and heat to 350 degrees. Pat the tofu dry with paper towels. Add to wok and fry until golden on both sides, about 3 minutes. Using a wire strainer or spatula, transfer tofu to paper towels, reserving the oil. Turn off the heat. When the tofu is cool enough to handle, cut it into half-inch dice. Set aside.
  • Discard all but two tablespoons of the oil in the wok, and return to high heat. When the oil is shimmering, add diced tofu, garlic, bok choy or napa cabbage, mushrooms and chilies. Stir-fry until mushrooms are tender, about three minutes. Add mung bean sprouts, scallions, and soy sauce; stir-fry just until crisp-tender, two to three minutes. Add half a cup of the cucumbers, and cook 30 seconds.
  • In a large bowl, combine lettuce, sesame oil, mint, cilantro, basil and cooked vegetables. Toss lightly to combine. Divide the noodles among four (or two) bowls, and top with equal parts of salad. Garnish with remaining cucumbers, roasted peanuts and cilantro sprigs. Pass the dressing separately, to be spooned over the salad.

Tips:

  • Use high-quality glass noodles. Glass noodles made from green bean starch are the best choice for this dish, as they have a chewy texture and won't break easily.
  • Soak the glass noodles before cooking. This will help them to soften and become more pliable.
  • Use a well-seasoned wok. A well-seasoned wok will help to prevent the noodles from sticking and will also impart a delicious flavor to the dish.
  • Cook the noodles over high heat. This will help to create a nice char on the noodles and will also help to prevent them from sticking together.
  • Add the vegetables towards the end of the cooking process. This will help to prevent them from becoming overcooked and mushy.
  • Use a light hand with the soy sauce. Soy sauce can be very salty, so it's important to use it sparingly. You can always add more soy sauce to taste, but it's difficult to remove it once it's been added.

Conclusion:

Stir-fried vegetarian glass noodles is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. By following these tips, you can make sure that your stir-fried glass noodles turn out perfectly every time.
