2 tbsp butter
2 tbsp flour
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dry mustard powder
1.5 cups milk (of choice)
1/2 lb Velveeta cheese (cubed)
1/2 cup shredded cheddar

Steps:

  • Cook the macaroni in a large pat of salted water according to the package directions and drain well. In a large saucepan, melt the butter over medium heat. When melted, stir in the flour, garlic powder, onion powder, and dry mustard, until smooth and incorporated.

32 ounces macaroni noodles
16 ounces Velveeta cheese, Cut into 1 inch squares
8 ounces cream cheese
1/4 cup butter
1/4 cup flour
3 1/2 cups milk
2 1/2 cups shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon white pepper

  • Boil noodles and drain.

1 pound medium shell pasta
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1 1/2 cups whole milk
1 cup half-and-half
2 cups grated cheddar cheese (about 8 ounces)
1 cup grated Colby Jack cheese (about 4 ounces)
1 heaping teaspoon Dijon mustard
1/8 teaspoon paprika
Dash of hot sauce
4 ounces cream cheese, cut into cubes
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside.
  • Meanwhile, melt the butter in a large saucepan over medium-high heat. When it begins to foam, sprinkle in the flour and stir until it becomes pasty, about 1 minute. Whisk in the milk and half-and-half and bring to a low simmer. Cook, stirring, until the mixture looks thick, about 5 minutes.

1 pound penne pasta

2 teaspoons fresh thyme
1 clove garlic, minced
1 pound white button mushrooms, sliced
Freshly ground black pepper
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup heavy cream
1 tablespoon Dijon mustard
2 cups grated fontina cheese
1/2 cup grated Parmesan
6 slices Taleggio cheese

Steps:

  • Bring a large pot of water to a boil. Salt the water. Add the pasta and cook according to the package instructions. Drain.
  • In a large skillet, heat the butter, thyme and garlic over medium heat for 2 minutes. Add the mushrooms and cook until they release their water and begin to brown, about 7 minutes.
