Delightfully refreshing, the lemon, sugar, strawberry and basil all work together well, especially when well-chilled after shaking.

4-5 fresh basil leaves
12 ounces seltzer ((1 can))
1 lime (half juiced, half sliced)

Steps:

  • Wash, hull, and roughly chop the strawberries. Cut a lime in half. Juice half of the lime, and slice the other half of the lime for garnishes.
  • Muddle the strawberries, lime juice, and basil together using a large mortar and pestle. Alternately, you can use a fork or potato masher. It should be broken down enough so the mixture can fit through a straw, but not too much that there's no texture.
  • Divide the berry mixture between two tall glasses. Fill the glasses with crushed ice, and fill to the top with seltzer.

1/2 cup sugar
1/2 cup water
1/2 cup sliced strawberries
1 cup whole milk or half-and-half
2 tablespoons chocolate syrup
1 tablespoon strawberry simple syrup
2 strawberries, sliced with stems still attached, for garnish
Semisweet chocolate or similar, for garnish
Ground cinnamon, for garnish

Steps:

  • For the strawberry simple syrup: Combine the sugar and water in a small saucepan and bring to a boil over medium-high heat. Add the sliced strawberries. Using a fork, press the strawberries to release their juices. Allow the mixture to boil for 1 to 2 minutes. Steep for at least 10 minutes. Strain the mixture into a resealable jar. Cover and keep in the refrigerator until ready to serve.
  • For the mocktail: Combine the milk, chocolate syrup and strawberry simple syrup in a cocktail shaker filled with ice. Shake until thoroughly chilled. Strain into 2 martini glasses.
