It is definately worth your time and extra strawberries to make the butter. I'm sure it would make good french toast. 1 1/2 cups flour
1 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1/2 cup oil
1 (10 ounce) package whole frozen strawberries, thawed & drained (they will mash in the mixer)
1 (10 ounce) package strawberries, thawed & drained
1 cup butter, softened
1 cup powdered sugar, sifted

Steps:

  • Bread.
  • Mix flour, sugar, cinnamon, salt & soda.
  • Combine eggs, oil & strawberries.
  • Add to dry ingredients. Use a mixer and mix together.
  • Pour into a greased and floured 9"x5" loaf pan.
  • Bake at 350 degrees for 50-60 mins or until a toothpick comes out fairly clean.
  • Serve with strawberry butter.
