This is a cool creamy strawberry cake, I got the recipe from my Mom I am not sure where she got it but I love it. I love to bake and this one is sooo good and I love to make things that look pretty and this one definately does. The cake is hot pink and the icing a lighter pink and then I garnish with fanned strawberries on top! Hope you like it as much as I do.

1 (18 1/4 ounce) package white cake
1 (3 ounce) package strawberry gelatin powder
1 cup fresh strawberries (mashed)
1 cup vegetable oil
1/2 cup milk
4 eggs
1 cup coconut (flaked)
1/2 cup pecans (chopped)
1 (8 ounce) package cream cheese
1/2 cup butter (room temperature)
3 1/2 cups confectioners' sugar
3/4 cup fresh strawberries (mashed and drained)
1/2 cup flaked coconut
1/2 cup pecans (chopped)

Steps:

  • Preheat oven to 350 degrees. Grease and flour 3 9 inch round pans.
  • In a large bowl, mix toether cake mix and gelatin.
  • make a well in the center and add 1 cup mashed strawberries, oil, milk and eggs. Beat on low speed just until blended. Beat on medium speed for 4 minutes scraping bowl.
  • Fold in coconut and pecans.
  • Pour batter evenly into the 3 pans. Then bake in oven 25-30 minutes or until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then turn out on wire rack and cool completely.
  • To make Strawberry Cream Cheese Frosting: Mash 3/4 cup fresh strawberries to make 1/2 cup, then DRAIN WELL. Meanwhile beat cream cheese and butter until smooth. Blend in the confectioners sugar and then add your drained strawberries. Beat on medium until well combined. Fold in coconut and pecans. Refrigerate until cake is completely cooled.
  • Frost cake between layers and top and sides. Chill uncovered for 30 minutes until frosting is set. Cover and chill for at least 4 hours before serving.

1 pound strawberries, trimmed
3 cups cake flour, sifted
1 teaspoon baking soda
1 teaspoon fine salt
1 1/4 cups unsalted butter, at room temperature
2 cups granulated sugar
3 large eggs, at room temperature
1 teaspoon pure vanilla extract
Pink gel food coloring, optional
One 0.25-ounce packet unflavored gelatin (see Cook's Note)
2 cups heavy whipping cream
2 cups confectioners' sugar, sifted
1 teaspoon pure vanilla extract
4 ounces spiced biscuit cookies, such as Lotus Biscoff (about 4 cookies)
4 ounces strawberry crème-filled sandwich cookies or shortbread (about 4 cookies)
One 2.75-ounce package strawberry-flavored wafer cookies, such as Keebler (about 12 wafers)

Steps:

  • For the strawberry cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking pan with cooking spray, then line with parchment paper, allowing the parchment to hang over the sides. Lightly coat the parchment with cooking spray.
  • Put 8 ounces of the strawberries in a blender and process until pureed; you should have 1 cup. Set aside.
  • Sift the flour, baking soda and salt into a large bowl.
  • Beat the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment on medium speed until light and fluffy, about 4 minutes, scraping down the sides of the bowl halfway through.
  • Add the eggs, one at the time, beating to blend between additions and occasionally scraping down the sides and bottom of the bowl until the batter is completely combined, smooth and creamy.
  • With the mixer on low, add the dry ingredients in 3 additions, alternating with the strawberry purée, beginning and ending with the dry ingredients.
  • Add the vanilla and mix until combined, making sure not to overmix. Add a few drops of the pink food coloring if using until you reach the desired color. Chop the remaining 8 ounces strawberries; you should have 1 cup. Fold the chopped strawberries into the batter.
  • Transfer the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, 30 to 40 minutes (see Cook's Note).
  • Allow the cake to cool slightly in the pan before inverting it on a wire rack or serving dish. Remove the parchment and allow to cool completely, 30 to 35 minutes.
  • For the whipped cream: Add the gelatin to the heavy cream in the bowl of a stand mixer and whisk by hand until fully dissolved. Beat the heavy cream mixture in a stand mixer fitted with the whisk attachment on low speed. Slowly add the confectioners' sugar until combined. Increase to medium high speed and whisk until stiff peaks form, about 2 minutes. Whisk in the vanilla until combined.
  • For the strawberry shortcake topping: The cookies and wafers each have different textures, so they need to be processed one at a time. Pulse the spiced biscuit cookies in a food processor until crushed, then transfer to a plate. Pulse the strawberry crème-filled sandwich cookies and transfer to the same plate. Pulse the strawberry-flavored wafer cookies, transfer to the plate and mix together the cookie crumbs.

I got this recipe from a woman I worked with in Germany (not sure where she originally got it). I am posting it the way she wrote out the recipe but she also gave me some variations. You can substutite strawberry cake mix for the white mix and you can use fresh strawberries instead of frozen (which I prefer). If you substitute the fresh strawberries for the frozen you don't have to store the cake in the freezer, the refrigerator is fine.

1/2 cup cold water
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1/2 cup orange juice
1 Tbsp. lemon juice
2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Combine first 3 ingredients; press onto bottom of 9-inch springform pan. Line side of pan with 4-inch-wide strip of parchment.
  • Reserve 8 strawberries for garnish; cut remaining berries into 1/4-inch-thick slices. Stand largest strawberry slices around edge of prepared pan; finely chop remaining strawberry slices.
  • Sprinkle gelatine over cold water in small saucepan; let stand 1 min. Cook on low heat 3 min. or until gelatine is completely dissolved, stirring constantly. Remove from heat; set aside.
  • Beat cream cheese, sugar, orange juice and lemon juice in medium bowl with mixer until blended. Add chopped berries; mix well. Gradually whisk in gelatine. Refrigerate 5 min. or until slightly thickened. Whisk in 1 cup COOL WHIP; pour into prepared pan.
