STRAWBERRY OATMEAL BREAKFAST BARS
I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.

- Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
- Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
- Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
- Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
- Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.

STRAWBERRY-ORANGE OATMEAL BARS
A strawberry-orange filling, combined with a coconut-almond-oatmeal crust, makes for fruity and flavorful bar! Adjust the amount of maple syrup used in the filling according to the sweetness of your strawberries--and feel free to use brown sugar instead of maple syrup, if you prefer.

Steps:
- Preheat oven to 375°F.
- In a large bowl, mix everything together but the jam.
- Measure out 2 cups of this mixture. Leave the rest in the bowl and set aside.
- Take the 2 cups of the mixture and press it into the bottom of an 8 inches square pan, coated with cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker).
- Take the remaining mixture and spread it over the jam. Press down lightly.
- Bake 25 minutes.
- Remove the pan from the oven and allow to cool for at least 15 minutes before cutting into bars.
STRAWBERRY FILLED OATMEAL BARS
I created this recipe one day after coming home from a long vacation and realizing that I didn't have any eggs with which to bake. I knew I had butter, sugar and old-fashioned oats on hand, so I started brainstorming on what I could create with those simple ingredients. After playing around with my one of my grandmother's old...

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Using cooking spray, grease one 9x9 inch pan. (You could also line with greased parchment paper.)
- 3. In a mixer combine all ingredients except butter and strawberry jam until well combined.
- 4. Mix in softened butter until you have a nice crumbly mixture.
- 5. Press about 2/3 of the mixture (about 1 1/2 to 2 cups) into the bottom of the baking dish.
- 6. Heat jam in the microwave (in a microwave safe dish) for about 20 seconds, then stir. This will make step seven MUCH easier.
- 7. Spread the strawberry jam evenly over the top, allowing room for a small border of oats at the edge. (about 1/4 to 1/2 inch)
- 8. Sprinkle the remaining oat mixture over the top.
- 9. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.
Tips:
- Choose ripe strawberries. This will ensure that your bars are sweet and flavorful. You can use fresh or frozen strawberries, but if using frozen, be sure to thaw them completely before using.
- Don't overmix the batter. Overmixing can make the bars tough. Mix just until the ingredients are combined.
- Press the batter firmly into the pan. This will help to prevent the bars from crumbling when you cut them.
- Bake the bars until they are set in the center. A toothpick inserted into the center should come out clean.
- Let the bars cool completely before cutting them. This will help to prevent them from falling apart.
Conclusion:
Strawberry oatmeal bars are a delicious and easy-to-make treat that is perfect for any occasion. They are a great way to use up fresh strawberries, and they are also a healthy and nutritious snack. With a few simple tips, you can make sure that your strawberry oatmeal bars turn out perfectly every time.
