Time 15m

Number Of Ingredients 5

2 pkg baby spinach
1 pkg strawberries, fresh
2 can(s) canned mandarin oranges
1 red onion
1 bottle light raspberry vinagarette dressing

Steps:

  • 1. Wash and drain spinach and take off large stems. Put in large bowl.
  • 2. Wash and drain strawberries and cut into quarters. Put into bowl.
  • 3. Slice red onion thinly and put into bowl. I use whole onion but if you want, you can use half.
  • 4. Drain mandarin oranges and put into bowl.
  • 5. Just before serving, pour bottle of dressing and mix ingredients. I use whole bottle, but you can use it to taste. Its best to finish off the salad because the spinach gets soggy if leftover.

Tips:

  • For the best flavor, use fresh, ripe strawberries.
  • If you don't have red onion, you can use a white or yellow onion, but the flavor will be milder.
  • To make the salad ahead of time, toss the strawberries and onions with the dressing and refrigerate for up to 2 hours. Just before serving, add the goat cheese and walnuts.
  • This salad is also delicious with grilled or roasted chicken or fish.

Conclusion:

Strawberry onion salad is a refreshing and flavorful side dish that's perfect for summer gatherings. It's also a great way to use up fresh strawberries. With its sweet, tangy, and savory flavors, this salad is sure to be a hit with everyone who tries it.
