CHEF JOHN'S STRAWBERRY ICE CREAM
Many people consider this type of strawberry ice cream recipe a 'hack' or a 'cheat' because we're skipping the more time-consuming and sometimes temperamental egg-custard step; but even if I didn't want to save time I'd still prefer this method. To be clear, I'm only speaking about this specific flavor of ice cream. For deep, dark chocolate, or butter pecan, I'll take the classic French-style every time. But, for sweet, juicy strawberries, I'm not a big fan of the egginess you get with the traditional method.

STRAWBERRIES IN ROSE CRèME ANGLAISE
Fresh fruit is an excellent option for dessert. Here, ripe, sweet organic strawberries are served in a pool of crème anglaise, an easy-to-make pouring custard, with a splash of rose water. Since strawberries are botanically related to roses, it's a nice pairing, and a few rose petals add drama. Make the crème anglaise a day or two in advance.

Steps:
- Put half-and-half in a saucepan over medium heat. Bring to just under a simmer, then turn off heat.
- In a mixing bowl, whisk together sugar, cornstarch and egg yolks. Whisking constantly, slowly drizzle hot half-and-half into the sugar mixture, then pour the mixture back into the saucepan. Cook, whisking, over a very low heat until the mixture coats the back of the spoon, 5 to 10 minutes. (Alternatively, you can do this in a double boiler.) Remove from heat and strain sauce through a fine-mesh sieve. Cool over an ice bath, then stir in rose flower water. Serve immediately, or refrigerate until ready to serve. (Crème anglaise can be made up to 2 days in advance.)
- To serve, place strawberries in a bowl and sprinkle with confectioners' sugar, tasting as you go until the berries are your preferred sweetness. If you like, add 2 or 3 drops of the rose flower water to the berries.
- Pour ½ cup sauce into shallow dessert bowls. Spoon berries over. Garnish with rose petals, if using.

Steps:
- Combine cream, milk, geranium leaves, and cardamom pods in a saucepan; cook over medium-high heat, stirring occasionally, until mixture is scalding hot (do not let simmer), about 2 minutes. Remove from heat. In a large heatproof bowl, whisk yolks with sugar and salt until smooth and pale. Whisking constantly, ladle half of cream mixture into yolk mixture, a little at a time, until combined. Whisk yolk-and-cream mixture back into saucepan with remaining cream mixture. Cook over medium heat, stirring constantly, until thick enough to coat the back of a wooden spoon and a thermometer registers 180 degrees, 5 to 7 minutes.
- Pour custard through a medium-mesh sieve into a bowl set in an ice-water bath. Let cool completely, stirring frequently, about 10 minutes.
- Churn custard in an ice cream maker (following manufacturer's instructions) until it has texture of soft-serve ice cream. Freeze in an airtight container until firm, at least 4 hours and upto 1 month. If ice cream is frozen solid, transfer to refrigerator to let soften slightly before serving, about 20 minutes. Serve, with peaches and cookies.
STRAWBERRY-ROSE GERANIUM ICE CREAM
Steps:
- In a small saucepan bring the half and half and sugar to a boil. Stir in the rose geranium leaves, cover and remove from the heat. After about 10 minutes, strain the cream and let it cool. If using rose water, simply warm the half and half and sugar over medium heat long enough to dissolve the sugar (about 1 to 2 minutes) and stir in the rose water. Cool. Wash and hull the strawberries. Puree them in a blender or food processor until fairly smooth. You should have 2 cups. Stir the strawberries and infused mixture together and chill in the refrigerator until cold to the touch. Freeze in an ice cream maker according to manufacturer's instructions.
Tips:
- Choose the right strawberries. Use ripe, sweet strawberries for the best flavor.
- Use fresh rose geranium leaves. Fresh leaves will give the ice cream the best flavor. If you can't find fresh leaves, you can use dried leaves, but they will not be as flavorful.
- Make sure the ice cream base is chilled before churning. This will help the ice cream freeze more quickly and smoothly.
- Churn the ice cream according to the manufacturer's instructions. Over-churning the ice cream will make it icy.
- Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours before serving. This will allow the ice cream to firm up and develop its full flavor.
Conclusion:
Strawberry rose geranium ice cream is a delicious and refreshing summer treat. It's easy to make and can be enjoyed by people of all ages. The combination of sweet strawberries and fragrant rose geranium leaves creates a unique and unforgettable flavor. Give this recipe a try and see for yourself how delicious it is!
