1 teaspoon fresh lemon juice
1/2 cup plus 1 tablespoon granulated sugar
2 cups all-purpose flour

Cut in the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs. Stir in cream until dough starts to come together, then stir in strawberry mixture.
  • Using a 1 1/2-inch ice cream scoop or a tablespoon, drop dough onto baking sheets lined with parchment, spacing evenly apart. Tips:

  • For the best flavor, use fresh strawberries. If you don't have fresh strawberries on hand, you can use frozen strawberries that have been thawed and drained.
  • Be sure to wash the strawberries thoroughly before using them.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • The dough for these cookies is very soft and sticky. Be sure to chill the dough for at least 30 minutes before rolling it out.
  • When rolling out the dough, use a lightly floured surface to prevent the dough from sticking.
  • Be sure to cut the cookies out with a sharp knife or cookie cutter. Dull knives will tear the dough.
  • Bake the cookies until they are golden brown around the edges. Overbaking will make the cookies dry.
  • Let the cookies cool completely before frosting them.
  • If you don't have time to make the frosting, you can simply sprinkle the cookies with powdered sugar.

Conclusion:

These strawberry shortcake cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are soft and chewy with a sweet and tangy frosting. These cookies are sure to be a hit with your family and friends.
