STRAWBERRY DROP BISCUITS

Strawberry Drop Biscuits image

Somewhat of a cross between a muffin top and a biscuit, these sweet breakfast treats are foolproof and easy: No rolling or cutting is required, and everything is mixed in a single bowl. They bake up craggy and crunchy on the outside, but are tender once you break them open. The heavy cream adds richness, and the additional water creates just the right amount of steam while baking to keep the biscuits light and fluffy. Salted butter works nicely here, but if you're using unsalted butter, just add 1/4 teaspoon or so of fine salt to the dry ingredients. If you don't have strawberries, feel free to swap in the same amount of fresh blueberries, raspberries or diced stone fruit.

Time 30m

Yield 6 biscuits

Number Of Ingredients 7

1 1/2 cups/190 grams all-purpose flour
1/4 cup/50 grams granulated sugar
4 teaspoons baking powder
6 tablespoons/85 grams cold salted butter, cut into 1/2-inch cubes
4 medium strawberries, cut into small 1/4-inch or 1/2-inch pieces (about 2/3 cup/100 grams), or whole blueberries, raspberries or other diced stone fruit
6 tablespoons heavy cream, plus more if needed
1/4 cup/30 grams unsifted confectioners' sugar

Steps:

  • Arrange an oven rack in the center of the oven. Heat the oven to 425 degrees. Line a sheet pan with parchment. Set aside.
  • Whisk the flour, granulated sugar and baking powder together in a large mixing bowl. Toss the pieces of butter into the flour mixture to coat. Using a pastry cutter or your fingers, work the butter into the flour until the mixture is mealy and small pieces of pea-size butter remain.
  • Add the diced strawberries and toss with a fork to combine. Make a well in the center of the mixture and add 4 tablespoons of the heavy cream and 1/4 cup water. Continue tossing with the fork until the dough is just evenly damp and shaggy, being careful not to overwork the dough too much. Add 1 to 3 teaspoons more water, as needed, if the dough is still too dry to work with.
  • Drop 6 mounds of dough (each a generous 1/3 cup) onto the baking sheet, leaving at least 1 1/2 inches of space between each mound and gently padding any stray bits of dough back into place as you work. Lightly brush the tops with 1 tablespoon heavy cream and bake until deep golden brown and cooked through, about 15 minutes. Remove from the oven and transfer the biscuits to a wire rack to cool for 5 minutes.
  • Add the confectioners' sugar to a small bowl, and whisk in the remaining 1 tablespoon heavy cream, adding more if needed to make a thick icing that is just thin enough to drizzle. Spoon over the warm biscuits; serve warm or at room temperature.

SPELT BISCUITS

Spelt Biscuits image

I have made these biscuits for health nuts and non healthy eaters alike, but there are never leftovers. These are heavier on account of the spelt flour, but the nutty whole grain flavor is divine. Best when served fresh out of the oven, eaten with butter and honey or jam.

STRAWBERRY SPELT BISCUITS RECIPE - (4.7/5)

Strawberry Spelt Biscuits Recipe - (4.7/5) image

Provided by Kathy_Hester

Number Of Ingredients 10

1 teaspoon apple cider
1 teaspoon vanilla
1 cup soymilk (or other nondairy milk)
1 1/2 cups Bob's Red Mill whole-wheat pastry flour
1 cup Bob's Red Mill spelt flour
1/4 cup coconut sugar or brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup coconut oil
1 cup minced strawberries

Steps:

  • Preheat the oven to 425 degrees. Oil 2 cookie sheets or line with parchment paper. Stir the apple cider vinegar and vanilla into the soy milk and set aside. This will make it curdle and thicken it. Please note that if you use another milk it may not curdle. Add the flours, sugar, baking powder and salt to a mixing bowl and mix well. Then add in the solid coconut oil (chill it before hand if it's a short summer day.) Cut in the coconut oil with a pastry cutter or 2 large forks. You can also use your food processor. No matter what method you use you want the mixture to look similar to a course corn meal. Pour the soymilk mixture in the dry mixture with the strawberries and begin mixing with a wooden spoon. Spread some extra flour onto a large cutting board, then scrape the dough out and pat the dough about ½ inch thick. Use a cookie cutter or a jam-sized mason jar to cut out the biscuits. Place on the prepared cookie sheet. Gather up the leftover dough and pat in out again and cut out biscuits. Continue this process until all the dough is used. Cook for 12 to 15 minutes until the bottoms of the biscuits are a medium-brown.

STRAWBERRY BISCUIT SHEET CAKE

In this strawberry shortcake that feeds a crowd, a tender biscuit cushions a cloud of lightly sweetened cream and a tumble of juiced-up berries. Peaches, plums, or nectarines can be swapped in for the strawberries if you prefer.

Time 55m

Number Of Ingredients 16

4 cups cake flour (not self-rising), such as Swans Down, plus more for dusting
2/3 cup granulated sugar
5 teaspoons baking powder
2 teaspoons kosher salt
1 1/2 sticks cold unsalted butter, cut into pieces
1 1/4 cups buttermilk
Heavy cream, for brushing
Fine sanding sugar, for sprinkling (optional)
4 cups sliced strawberries (from 2 quart containers)
5 tablespoons granulated sugar
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1 1/4 cups heavy cream
Scraped seeds from 1 vanilla bean, or 2 teaspoons pure vanilla paste
3 tablespoons confectioners' sugar
Freeze-dried strawberries, finely ground, for serving (optional)

Steps:

  • Biscuit: Preheat oven to 450 degrees. In a bowl, combine flour, granulated sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut in butter until mixture resembles coarse meal. Add buttermilk; stir until just combined.
  • Turn out dough onto a lightly floured surface; knead once or twice to help it come together. Pat into a 10-by-7-inch rectangle, about 3/4 inch thick. Cut length‑wise into thirds, then crosswise into fourths to create 12 equal pieces. Using a spatula, transfer to a 9 1/2-by-12 1/2-inch rimmed baking sheet or other pan, arranging pieces to roughly re-create original rectangle but leaving 1/2 inch between them.
  • Brush tops with cream; sprinkle generously with sanding sugar. Bake, rotating sheet once, until golden brown and cooked through, 25 to 28 minutes (gaps should be gone, so you have a single but easily separable biscuit). Let cool on sheet 10 minutes, then carefully lift with 2 large spatulas onto a wire rack. Let cool almost but not quite completely, about 1 hour.
  • Berries and cream: Meanwhile, combine strawberries, granulated sugar, salt, and lemon juice; let stand, stirring occasionally, until juicy, about 30 minutes. Beat cream with vanilla and confectioners' sugar on mediumhigh speed to stiff peaks.
  • Carefully slide biscuit onto a serving platter. Spoon 2 cups whipped cream over biscuit; top with 3 cups berry mixture, drizzling with some juices. Sprinkle with berry powder; serve immediately, with remaining whipped cream and berries on the side.

Tips and Conclusion

Baking delectable strawberry spelt biscuits is a delightful experience that requires careful attention to detail. Here are some essential tips to ensure your biscuits turn out perfectly: - **Use Fresh Strawberries**: Opt for ripe and flavorful strawberries for the best taste. If using frozen strawberries, thaw and drain them thoroughly before incorporating them into the biscuit dough. - **Proper Measurement**: Accurately measure the ingredients, especially the flour and baking powder, to achieve the desired texture and rise. Use a kitchen scale for precise measurements if possible. - **Cold Butter**: Keep the butter cold until incorporating it into the dough. This prevents the butter from melting too quickly and creating a greasy dough. Use a pastry cutter or two forks to work the butter into the flour mixture until it resembles coarse crumbs. - **Buttermilk**: Buttermilk adds a tender, moist crumb to the biscuits. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes before using. - **Chilling the Dough**: Chilling the dough before baking is crucial for achieving flaky layers. This allows the butter to solidify and create pockets of steam during baking, resulting in a light and airy texture. - **Baking Temperature**: Preheat the oven to the specified temperature before baking to ensure even cooking. Bake the biscuits until they are golden brown on top and a toothpick inserted into the center comes out clean. - **Glaze or Frosting**: Optional glazes or frostings can enhance the flavor and appearance of the biscuits. A simple glaze made with powdered sugar and milk or a cream cheese frosting can complement the strawberry flavor beautifully. In conclusion, baking strawberry spelt biscuits requires precision, attention to detail, and a love for creating delicious treats. By following these tips and carefully executing each step of the recipe, you can create mouthwatering biscuits that are perfect for breakfast, brunch, or as a delightful snack. Remember to experiment with different flavor combinations and toppings to create your own unique variations of this classic recipe. Happy baking!
