2-1/4 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1-1/2 cups coarsely chopped fresh strawberries
2 large eggs, lightly beaten
1/2 cup whole milk
1/2 cup sour cream
1/3 cup canola oil
STREUSEL TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, combine flour, sugar, baking powder and salt. Gently fold in strawberries. 4 Tbsp cold unsalted butter, cut into 1/2 inch pieces
MUFFINS:
3 c all-purpose flour
1 c light brown sugar, packed
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1 c buttermilk *
1 egg
1/2 c canola oil (or vegetable oil)
2 tsp pure vanilla extract
2 c fresh, washed, dried off, hulled and diced (about 1/2 inch pieces)

Steps:

  • 1. Preheat the oven to 400F degrees. Prepare 12 standard-sized muffin cups - either grease the tins or use paper liners, and grease the liners (I use butter flavored vegetable spray.
  • 2. For the topping: In a small bowl, stir together the 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon ground cinnamon, and a pinch of salt.
