12 fresh jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) package whipped cream cheese
12 slices bacon, cut in half

36 -40 jalapeno peppers
1 lb breakfast sausage
8 ounces cream cheese
8 ounces shredded cheese
1/2 teaspoon liquid smoke
3 tablespoons dehydrated onion
your favorite barbecue rub
1 garlic clove, pressed
1 lb sliced bacon, cut in half

Steps:

  • Fry the sausage with the onion, rub, garlic and liquid smoke until the sausage is done. Drain well and let cool a bit. mix the sausage in a bowl with the cheese and cream cheese and set aside. Prepare smoker and set / adjust to 250 degrees or preheat oven to 300 degrees. You can either clean the jalapenos by cutting the stem end off and cleaning out the seeds and ribs and standing them in a pepper rack (recommended) or slice them in half lengthwise, removing the seeds and ribs and "canoeing" them. Stuff each pepper until filling is level with top edge of pepper. For vertical peppers lay one piece of bacon over the top of each and fasten with a toothpick and set them in the holes of a pepper roaster. For canoe style, lay a piece of bacon over the top of each and lay out on a baking sheet. Put into smoker and cook for 3-4 hours or bake in oven for 2-3 hours. At end of roasting time turn on broiler and broil long enough to crisp the bacon.

10 jalapeno peppers (small size)
1/2 cup shredded cheddar cheese
1/4 cup light cream cheese, softened
1/4 cup salsa
3/4 cup fresh breadcrumb
2 tablespoons chopped fresh parsley
2 tablespoons melted butter
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Cut Jalapenos in half lengthwise .
  • Scrape out all of the seeds and veins and discard . (This is the HOT part of the pepper).
  • In a medium bowl, blend cheeses,salsa and 1/4 cup breadcrumbs with a fork.
  • Fill Jalapenos evenly . Place on a baking dish.
  • In a small bowl, blend remaining 1/2 cup breadcrumbs, parsley and butter.
  • Distribute evenly over filled peppers.

1 pound pork sausage, hot

15 jalapenos
8 ounces cream cheese
1/3 cup jalapeno jelly
1/2 cup shredded cheddar cheese
1/2 teaspoon cumin
15 slices bacon

Steps:

  • Wearing gloves, cut the ends off the jalapenos, and slice each in half lengthwise. Scoop out the seeds and as much white membrane as possible.
  • Place the jalapeno halves in a glass bowl, and cover with hot water. (There's no need to boil the water, just use the hottest tap water possible; this will pull alot of the spicy oils out of the jalapenos.) Let sit for at least 20 minutes.
  • Preheat oven to 350°F Mix both cheeses, jelly and cumin together.
  • Slice the bacon in half, making 30 pieces of bacon.

1 (4.25 ounce) can chicken spread
