2 bone-in pork loin chops (1 inch thick and 8 ounces each)
3 tablespoons butter, divided
1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
1/4 teaspoon dried oregano
1/8 teaspoon pepper
2 slices deli ham
1/2 cup sherry or chicken broth
2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Cut a pocket in each chop by slicing almost to the bone; set aside., In a large skillet, heat 1 tablespoon butter. Cook and stir mushrooms and onion until tender, 2-3 minutes. Remove from the heat. Stir in oregano and pepper. Place a ham slice in the pocket of each chop; fill each with mushroom mixture., In the same skillet, brown chops in remaining butter. Add sherry, stirring to loosen browned bits from pan. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 145°, 20-25 minutes. 4 pork loin chops, preferably bone-inand at least 1 inch thick
1 tablespoon minced fresh rosemary
1 teaspoon salt, plus more for the sauce
1 teaspoon freshly ground blackpepper, plus more for the sauce
1 teaspoon  finely minced garlic
3 tablespoons butter
1 tablespoon minced shallot
1 cup cherries, stemmed, pittedand halved
½ cup fruity red wine

Steps:

  • Pat the chops dry, and rub them all over with a mixture of the rosemary, salt, pepper and garlic. Cover, and marinate for up to 2 hours at room temperature, or overnight in the refrigerator. Bring the chops back to room temperature before grilling.
  • Heat one side of a charcoal or gas grill, and put the rack about 4 inches from the heat source. Cook the chops over the hottest part of the fi re until well seared on both sides, about 3 or 4 minutes per side. Move them to the cool part of the grill, cover and cook until done, anywhere from 1 to 10 minutes, depending on the heat of the fi re and the thickness of the chops. The pork is done when it's just fi rm to the touch, its juices run just slightly pink and the meat is rosy in the center, or when an instant-read thermometer registers 135 degrees in the thickest part of the chop (the temperature will continue to rise as the chops rest). Transfer them to a platter, cover loosely with aluminum foil and let them rest while you make the sauce.
  • Put 1 tablespoon of the butter in a skillet over medium-high heat. When the foam subsides, add the shallots, and cook until soft, 2 or 3 minutes. Add the cherries, wine and whatever juices have accumulated around the pork chops; cook, stirring occasionally, until the liquid reduces into a thin syrup, 5 or 6 minutes. Stir in the remaining 2 tablespoons butter, a little at a time, until it's incorporated into the sauce. Season with salt and pepper. Pour the sauce over the chops, and serve.

Salt and freshly ground black pepper
1 tablespoon peanut oil
1 tablespoon unsalted butter, plus 1 tablespoon
7 tablespoons sherry wine vinegar
3 tablespoons sherry
1 cup brown veal stock
1 tablespoon barbecue sauce
1 1/2 tablespoons Dijon mustard
2 tablespoons peeled, seeded, and chopped tomatoes
1 teaspoon minced chives

Steps:

  • Preheat the oven to 425 degrees F.
  • Pat the pork chops dry with paper towels and season on both sides with salt and pepper. Place a heavy saute pan over high heat. 7 tablespoons balsamic vinegar

1 cup brown veal stock
4 slices bacon, cut into 1/4 inch slices
6 ounces cabbage, cut into julienne
1 teaspoon Dijon mustard
2 tablespoons peeled, seeded and chopped tomatoes

I first cooked these in the early 90's when I belonged to a cooking school and they're great! Make sure your guests are hungry: this is a very hearty entree. Recipe #320348 makes a really good side dish. I cook them with apple juice - just haven't gotten around to trying them with wine. Note: The recipe is easily modified for thinner chops by reducing the browning and baking times.

4 slices day old bread, trimmed of some crust, cut in 1/4-inch cubes
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
2 tablespoons parsley, chopped
1/2 cup dark raisin
1 1/2 teaspoons salt
1 teaspoon dried marjoram
1/8 teaspoon pepper
6 pork chops, 1 1/2-inch thick (each about 3/4 pound)
1/4 cup flour
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1 cup white wine or 1 cup apple cider

Steps:

  • Melt 1/4 cup butter in a large skillet over medium high heat and saute the chopped onion and celery, stirring, until onion is golden, about 5 minutes. Remove skillet from heat. Gently stir in bread cubes. Add parsley, raisins, 1 1/2 teaspoons salt, marjoram and pepper; toss lightly to combine. Set aside.
  • Preheat oven to 350°F Trim excess fat from chops, reserving the fat. Using a sharp paring knife, cut a pocket in each chop, all the way to the rib. Fill each pocket with 1/4 cup stuffing; fasten together with a couple of toothpicks.
  • Mix together the 1/4 cup flour and 1 teaspoon salt. Lightly coat the pork chops on both sides with flour mixture, reserving remaining seasoned flour for gravy.
  • Heat 2 tablespoons butter and reserved pork fat in a large skillet. Over low heat, cooking 3 at a time, brown chops well on both sides, turning with tongs, 8-10 minutes on each side or until browned. Remove each batch of browned chops to paper towels.
  • Pour off fat from skillet, and add apple juice, white wine, cider or a combo of liquids to skillet. Stir over medium heat to dissolve browned bits. Pour into the bottom of roasting pan. Stand chops bone-side down in bottom of pan. Cover with foil and bake in preheated oven 1 hour.
  • Uncover and bake 30 to 40 minutes, or until tender. Remove chops to platter and tent with foil to keep warm.
  • Optional Gravy: Over medium heat boil drippings, uncovered, until reduced to 1 cup. Dissolve reserved flour mixture in 1/2 cup of water. Add to drippings and bring to a boil, stirring; simmer 3 minutes. Taste and adjust seasonings. Strain if necessary. Serve with chops.

2 cups fresh bread, cubed
1 tablespoon butter
1/4 cup chopped onion
1/4 cup green pepper, diced

  • Preheat oven to 350 degrees F.
  • Melt butter in medium skillet and add onion and green pepper, and saute over medium-high heat until tender, about 5 minutes.
  • Place bread cubes in medium bowl, add onion and green peppers, and remaining stuffing ingredients and mix well.
  • The stuffing should be fairly moist. Add more broth if needed or if using hard bread cubes.
  • In same skillet, heat olive oil over medium-high heat and quickly brown chops, about one minute each side.
  • Spray a casserole dish large enough to hold the chops with cooking spray.
  • Spoon stuffing into 2 mounds in dish, place browned chops on top, and cover.
  • Bake for about 45 minutes, until done.
  • About 10 minutes before chops are done, using the same skillet, melt butter over medium heat.
  • Add sliced mushrooms and saute for about 2 minutes, until they begin to soften.
  • Add wine and cook until its almost all evaporated.
  • Stir in flour well.
  • Dont worry, it will be dry.
  • Stir in chicken broth and let it quickly come to a boil.
  • Immediately reduce heat and let simmer for a few minutes to thicken.
  • If too thick for your liking, just stir in more broth and continue to simmer.
  • Spoon a little sauce over each chop and serve hot!
  • NOTE: I use whatever bread i have on hand for stuffing.
  • This was particularly good with sunflower bread, as you could taste the sunflower seeds.
  • NOTE: If stuffing chops, follow the directions as they are but stuff them before browning, using toothpicks to hold them together.
