Steps:
- Break bread into bite-sized pieces and put in large bowl. Cook sausage and break into small crumb-like pieces. Add to bread mixture. Cook mushrooms in a few tablespoons of olive oil. (Tip: Don't crowd the mushrooms or they won't brown). Add to bread mix. Saute celery, carrots in oil olive until just done. Add to bread mix. Add garlic, parsley, Italian seasoning to your liking. Beat eggs with 1 cup of chicken broth. Sprinkle on bread mixture, tossing as you go until moist enough to hold shape. Toss thoroughly. Take handfuls and make medium-sized balls. Squeeze to secure shape. Place in muffin tin. Bake for 30 minutes, or until its as brown and crispy as you like!
Tips:
- Use a variety of bread cubes: This will give your stuffing muffins a more complex flavor and texture. Try using a combination of white bread, wheat bread, and cornbread.
- Add some vegetables: Vegetables will add flavor, nutrition, and moisture to your stuffing muffins. Try adding diced celery, onion, carrots, or mushrooms.
- Don't forget the herbs and spices: Herbs and spices will add a lot of flavor to your stuffing muffins. Try using sage, thyme, rosemary, garlic powder, or onion powder.
- Use a flavorful broth: The broth you use will add a lot of flavor to your stuffing muffins. Try using chicken broth, vegetable broth, or turkey broth.
- Don't overmix the batter: Overmixing the batter will make your stuffing muffins tough. Mix just until the ingredients are combined.
- Bake the muffins at a high temperature: This will help them to rise and brown properly.
