450 g potatoes, peeled, chopped
250 g carrots, peeled, chopped
250 g swedes, peeled, chopped
80 g butter
1/4 teaspoon nutmeg, ground
salt & pepper

Steps:

  • Steam or boil each vegetable separately.
  • Mash each vegetable, and then mix gently together with butter, salt, pepper and nutmeg.

8 tablespoons (1 stick) butter, at room temperature
1 cup heavy cream
3 tablespoons coarsely ground black pepper
3 tablespoons salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the sweet potatoes on a baking sheet, drizzle with olive oil and bake until soft, about 20 minutes. When cool enough to hold, remove the peels and place in a saucepot. Add the butter, cream, salt and pepper and mash together.

3 large potatoes
3 carrots
½ swede
25g butter
splash of milk or cream
good grating of nutmeg

Steps:

  • Cut the veg into similar-sized chunks. Tip into a pan of cold salted water, bring to a boil, cover, then cook for 15-20 mins until all the vegetables are tender.
  • Drain, leave to steam-dry for a few mins, then tip back into the pan and mash with the butter, milk or cream, nutmeg and some seasoning. Keep warm until ready to serve.

A slightly sweet bread with a great flavor combination of raisins and caraway seeds.

1 teaspoon distilled white vinegar
⅔ cup milk
2 tablespoons brown sugar
1 egg
¼ cup margarine
¼ teaspoon salt
2 tablespoons molasses
2 cups all-purpose flour
1 pinch baking soda
1 teaspoon caraway seed
1 ½ teaspoons bread machine yeast
¾ cup raisins

Steps:

  • Combine the vinegar and the milk. Let stand for at least 15 minutes or until the mixture thickens.
  • Add the vinegar mixture, brown sugar, egg, butter, salt, molasses, bread flour, baking soda, caraway seeds and yeast in the order directed by your bread machine's manufacturer.
  • Set machine to basic cycle (fruit bread, white bread, etc depending on your bread machine), medium crust setting. Add the raisins when indicated to by your bread machine's manufacturer.
  • Alternately this bread can be mixed in the bread machine and then bake in the oven. Set bread machine to dough setting. Remove dough, shape into a loaf, cover and let rise in a warm place, until just under doubled in size. This will take about 1 hour. Bake the bread in a preheated 375 degrees F (190 degrees C) for 30 to 45 minutes. Bread will golden brown and sound hollow when thumped on the bottom.
