SIMPLE SHRIMP ON THE BARBIE



Simple Shrimp on the Barbie image

A very easy, healthy and delicious way to grill your shrimp. You can also skewer the shrimp if you want to. Just make sure to soak wooden skewers in warm water for 30 minutes. I didn't include the 1 - 2 hour marinating time. Enjoy!

2 tablespoons olive oil
1/2 cup white wine
2 tablespoons lemon juice
1 teaspoon sea salt
1 teaspoon fresh ground pepper
1 teaspoon cayenne pepper
2 garlic cloves, minced or 1 teaspoon garlic powder
1 1/2 lbs large shrimp, peeled, deveined, leaving tails on (you can leave the peels on the shrimp and cut down the back and devein if you prefer)
2 tablespoons parsley, chopped
lemon wedge, to garnish

Steps:

  • Mix olive oil, wine, lemon juice, salt, pepper, cayenne and garlic in a bowl. Add shrimp and toss to coat. Marinate in the fridge for an hour, two hours at the most. If you leave it longer, the lemon juice will start to "cook" the shrimp.
  • Heat barbeque to medium heat. Cook shrimp until just cooked through, about 3 minutes on each side.
  • Sprinkle shrimp with parsly and garnish with lemon wedges.

I love prawns. This is one of the yummiest prawn dishes that I have had. It combines two fantastic cooking elements, prawns and the BBQ. I think they go hand in hand.

1/2 cup butter, melted
1/4 cup olive oil
1/4 cup minced fresh herb (, Parsley,Thyme,oregano etc.)
3 tablespoons fresh lemon juice
4 garlic cloves, crushed
1 tablespoon minced shallot
salt and pepper
1 kg medium size prawns
1 lettuce

Steps:

  • Combine butter, oil, herbs, lemon juice, garlic, shallots, salt and pepper in a mixing bowl.
  • Mix in shrimp.
  • Marinate at room temperature 1 hour.
  • stirring occasionally.
  • Prepare barbecue on medium heat.
  • Thread prawns on narrow skewers.
  • Grill until just opaque, about 2 minutes per side.
  • Arrange cups of letuce on a platter and then place the skewers on the platter.
  • Garnish with lemon and serve.

Jumbo shrimp (10 to 15 count)
1/2 cup vegetable oil
1/4 cup white vinegar
1/4 cup orange juice
1/4 cup canned sweetened coconut cream
1/4 cup pineapple juice
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 tablespoons soy sauce
1 good shake hot sauce

Steps:

  • Combine all marinade ingredients.
  • Soak uncooked and unshelled shrimp in marinade for 1 to 1 1/2 hours turning periodically.

12 MSC certified whole large tiger prawns (jumbo shrimp)
1 tbsp whole black peppercorns
½ tbsp whole white peppercorns
½ tbsp whole red peppercorns
1 red chilli (chile), deseeded and sliced into rings
2 garlic cloves, finely chopped
3½ tablespoons unsalted butter
1 tbsp oyster sauce
1 tbsp fish sauce
1cm / 1⁄8-inch piece of root
ginger, peeled
½ tsp sugar
100ml / 1⁄3 cup chicken stock
2 handfuls of rocket (arugula)
5 chives, finely cut
2 spring onions (scallions), sliced into rings
handful of coriander (cilantro) leaves
vegetable oil
salt and pepper
lime wedges, to serve

  • Toast the black, white and red peppercorns in a dry frying pan (skillet) set over a high heat for about 1 minute until they start smoking.
  • Remove from the pan and set aside.
  • Take the pan off the heat for a moment and add 1 tablespoon of vegetable oil. Return the toasted peppercorns to the pan with the garlic and chilli and fry for 1-2 minutes. Next, add the butter. As soon as the butter is melted, add the oyster sauce, fish sauce and mix in the ginger. Now add the sugar, mix well, and then add the chicken stock. Reduce the sauce until it becomes thick. Give the sauce a taste, season with salt if you wish, set apart and keep warm.
  • Preheat the barbecue (grill) to a medium-high heat. Grill the marinated prawns for 2-3 minutes on each side and make sure they do not overcook.
  • Arrange half of the rocket (arugula) on a platter and place the prawns on top. Drizzle the sauce over the top.
