SUSAN'S SWEET AND TANGY MEATLOAF

Susan's Sweet and Tangy Meatloaf image

I snagged the basic recipe for this from AllRecipes.com but have changed it a great deal to suit my family's tastes. My husband is not a fan of meatloaf but BEGS for this one, as do my 2 and 4 year old. It's super easy and can be made early in the day and then just spread the sauce on top and bake. It's sweet, tangy and a bit spicy! I bet everyone will ask for seconds!

Make an easy meatloaf when you need to feed the family midweek. Serve slices with homemade tomato sauce and use any leftovers as sandwich filling

Provided by Lulu Grimes

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 14

1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, crushed
2 tbsp tomato purée
500g beef mince
1 egg
85g fresh breadcrumbs
1 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stick, finely chopped
1 garlic clove, finely chopped
500ml passata with basil
peas and mash, to serve (optional)

Steps:

  • Heat the oil in a frying pan and add the onion, cook for 4-5 mins over a low heat, then stir in the garlic. Leave to cool completely.
  • To make the tomato sauce, heat the oil in a saucepan and fry the onion, carrot and celery for 3-4 mins, then add the garlic and cook for a minute. Add the passata and bring to a simmer, then season and cook for 5 mins.
  • Heat oven to 180C/160C fan/gas 4. Mix the cooled onion with the tomato purée, mince, egg and breadcrumbs, and season. Line a 900g loaf tin with a liner or baking parchment and pack in the meatloaf mixture. Cook for 20-25 mins or until a skewer poked into the centre feels roasting hot when pulled out. Tips:

  • Choose the right ground meat: A combination of ground beef and pork is a classic choice for meatloaf, but you can also use all beef, all pork, or a mixture of other ground meats like lamb or veal. Just make sure the meat is at least 80% lean so that the meatloaf doesn't end up too greasy.
  • Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough. Just mix the ingredients until they are combined.
  • Shape the meatloaf into a loaf: Use your hands to shape the meatloaf mixture into a loaf shape. You can also use a meatloaf pan if you have one.
  • Cook the meatloaf at a low temperature: Meatloaf should be cooked at a low temperature, around 350 degrees Fahrenheit, so that it cooks evenly without drying out.
  • Baste the meatloaf with sauce: Basting the meatloaf with sauce during cooking will help keep it moist and flavorful.
  • Let the meatloaf rest before slicing: Once the meatloaf is cooked, let it rest for about 10 minutes before slicing. This will help the juices redistribute throughout the meatloaf.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. There are many different variations of meatloaf, so you can find one that suits your taste. Whether you like it classic or with a twist, meatloaf is a delicious and satisfying meal that is perfect for any occasion.
