Time 15m

Yield 2 cups

Number Of Ingredients 5

1/3 cup vegan sugar (or granulated sugar)
4 teaspoons ground cinnamon
1/2 teaspoon freshly ground nutmeg
2 cups whole almonds
3 tablespoons light corn syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a large baking sheet with non-stick cooking spray, or pour a small amount of oil, and evenly spread with a paper towel.
  • In a small dish, mix together the sugar, cinnamon, and nutmeg, set aside.
  • In another bowl, combine the almonds with the corn syrup until the almonds are evenly coated; sprinkle on the sugar, stirring to make sure it gets mixed in evenly.
  • Spread the coated almonds on the greased baking sheet and bake for 10-12 minutes or until bubbly, and the almonds are browned; remove from oven.
  • Allow to cool on the baking sheet, stirring to prevent sticking and to separate the nuts.
  • Store in an airtight container, if they last that long!

Tips:

  • To make sure the almonds are evenly coated, it's important to stir them constantly while they're in the syrup.
  • If you don't have a candy thermometer, you can test the syrup by dropping a small amount into a glass of cold water. If it forms a soft ball, the syrup is ready.
  • Be careful not to overcook the almonds, or they will become hard and brittle.
  • For a sweeter coating, add more sugar to the syrup. For a spicier coating, add more cinnamon or cayenne pepper.
  • Store the almonds in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Sugar and spice almonds are a delicious and easy-to-make snack that can be enjoyed by people of all ages. They're perfect for parties, potlucks, or just a simple afternoon treat. With just a few simple ingredients and a little bit of time, you can create a batch of these tasty almonds that are sure to be a hit.
