SUGAR FREE CROCK POT APPLE BUTTER
Another Graham Kerr wonder! From his cookbook "Simply Splenda". In his words, "This is dense, thick and dark brown, just like my grandmother made. The apple peels are left on to add pectin." **** Cooks Note: Apple butter can be used in baking - can replace up to 1/2 of the shortening in many recipes. Add with the liquid ingredients. You may need to reduce sugar in recipes since the apple butter is already sweetened. . P.S. It's also wonderful on plain old toast or waffles!

Steps:
- Rinse apples, core, and slice. Don't peel. Put in crock pot along with honey, water, and cinnamon and turn on low 12 hours or over night. At this point you will have apple sauce. Puree in the crockpot with a stick blender, or transfer to a food processor or blender and puree. Return to the crock pot and cook on the lowest setting (I use 'keep warm') with the lid cracked to allow steam to escape for another 4-6 hours, stirring once every couple hours. This will darken and thicken the apple butter. Spoon into jars and keep in the refrigerator, freezer, or can using a water bath method to keep in the pantry.
Tips:
- Use a variety of apples. This will give your apple butter a more complex flavor. Good choices include Granny Smith, Honeycrisp, Braeburn, and Gala apples.
- Peel and core the apples before cooking them. This will help to remove any unwanted bitterness from the apple butter.
- Cook the apples until they are very soft. This will make them easier to blend into a smooth butter.
- Add spices to taste. Cinnamon, nutmeg, and cloves are all classic spices that pair well with apple butter. You can also add other spices, such as ginger, cardamom, or allspice.
- Sweeten the apple butter with your favorite sweetener. You can use honey, maple syrup, or even stevia. If you are using a liquid sweetener, add it towards the end of the cooking process so that it doesn't burn.
- Can the apple butter for later use. Apple butter can be stored in jars in a cool, dark place for up to a year.
Conclusion:
Apple butter is a delicious and versatile condiment that can be used in a variety of ways. It can be spread on toast, waffles, or pancakes, or used as a filling for pies and pastries. It can also be added to yogurt, oatmeal, or smoothies. If you are looking for a healthy and flavorful way to enjoy apples, apple butter is a great option.
