My kids love to make these cookies, and they make wonderful gifts! A great cookie for vegans or people who are lactose-intolerant.

Number Of Ingredients 8

1/2 cup dried apricot
1/4 cup dried figs or 1/4 cup dates
1/2 cup chopped pecans
1/4 cup golden raisin
1/4 cup flaked coconut
3 tablespoons orange liqueur or 3 tablespoons orange juice
1/4 teaspoon almond extract
1/4 cup granulated sugar

Steps:

  • In a food processor or by hand, finely chop apricots, pecans, figs or dates, raisins and coconut.
  • Add liqueur or orange juice and almond flavoring.
  • Stir until well blended.
  • Roll into 36 balls, about 1-inch, by placing a small amount of the mixture between the palms of your hands.
  • Roll each ball in granulated sugar.
  • Layer in an airtight container, placing waxed paper or plastic wrap between each layer to prevent sticking.
  • Store in the refrigerator until ready to serve.
  • Serve on a glass plate lined with a paper doily.

This is a no-bake Christmas cookie that is a must-have in my family during the holidays. Having the clove to suck on at the end is the best part! They are delicious and pretty, not to mention simple to make. Everyone hears about sugar plums at Christmas, but nobody knows what they are! Kids LOVE these. Be sure to remove the whole clove before giving to small children however.

1 (14 ounce) can sweetened condensed milk
1 (3 ounce) package strawberry flavored Jell-O®
1 ½ cups shredded coconut
1 ½ cups graham cracker crumbs, or as needed
1 (3 ounce) package strawberry flavored Jell-O®
30 whole cloves

Steps:

  • Pour the milk into a mixing bowl, and sprinkle 1 package of strawberry gelatin overtop. Stir to dissolve the gelatin, then stir in the coconut and graham cracker crumbs until a stiff dough forms. You may need to use additional graham cracker crumbs to make a firm dough.
  • Roll the dough into approximately 30 - 1 inch balls. Pour the remaining strawberry gelatin into a small bowl, and roll the cookies in the gelatin to coat. Place the cookies onto a serving tray, and press a whole clove into each to form a stem.

1 cup butter, softened
1 1/2 cups sugar
1/2 cup confectioners' sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 egg
5 cup flour
1 teaspoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
1 cup canned plums, finely chopped. drained
Green and red colored sugar

Steps:

  • Cream butter and sugar. Add confectioner's sugar and vegetable oil; mix well. Add vanilla extract and egg; mix well. In a separate bowl, combine flour, baking powder, cream of tartar and salt. Add to first mixture; blend well. Fold in plums. Preheat oven to 350°F. Grease cookie sheets. Grease fingertips, roll dough into walnut size balls. Dip into colored sugar and place on cookie sheets, spacing 2 inches apart. Press down slightly with bottom of sugared glass. Bake for 12 minutes. Cool on cookie sheets 5 minutes. Then cool completely on a wire rack.

1 cup butter, room temp
3/4 cup packed brown sugar
2 cups all-purpose flour
3/4 cup chopped sugared gumdrop
1/4 cup granulated sugar, for dipping into
26 small sugared gumdrops

Steps:

  • Heat oven 350.
  • degrees F.
  • Chop your sugared gumdrops into small pieces, I use scissors, or a sugared or floured paring knife. A little tedious job, but once its done, the recipe is a breeze.
  • Mix butter and sugar and cream well with wooden spoon.
  • (If using hand mixer do not over beat the butter and sugar, this will make the butter ooozz out while baking and end up with a buttery greasy cookie.).
  • Stir in the flour and the chopped gumdrops.( A tip is to use 1/4 cup of the flour tossed into the chopped gumdrops, so that they stay seperate after cutting.).
  • Shape dough into balls. This doesnt want to hold together well, so just squeeze each ball tightly to form.
  • Place onto cookie sheet.
  • Press a greased glass into the granulated sugar, and then press down on each cookie to 1/2 inch thick.
  • Cut the small drops into pieces and press a few into each cookie.
  • Bake 10 minutes, or until edges are light golden.
  • Remove to wire rack.
  • Cool completely.
  • You will see that these are crumbly to make balls, You might even think that they won't hold up.
  • But do not add any more butter.
  • That is the reason that the last drops are pressed into place before baking.
