Time 20m

Yield 6

Number Of Ingredients 8

1 pound sugar snap peas
1 ½ cups arugula-baby spinach combo
⅔ cup fresh blueberries
¼ cup vegetable oil
¼ cup fresh blueberries
2 tablespoons white balsamic vinegar
1 tablespoon honey
1 tablespoon slivered almonds

Steps:

  • Cut ends off snap peas and pull off the tough strings running up the sides.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add snap peas, cover, and steam for 1 minute or until you reach desired tenderness. Don't overcook because you still want a little crunch.
  • Transfer peas to a bowl of ice water for a few minutes to stop the cooking and retain the bright green color; drain well. Transfer peas to a large bowl and add arugula-spinach combo and 2/3 cup blueberries.
  • Combine oil, blueberries, vinegar, and honey for dressing in a food processor or blender; process until smooth.
  • Drizzle dressing over salad mixture and toss until well coated. Sprinkle almonds over the top and serve.

Sugar-Snap Pea and Strawberry Salad image

An easy way to use up strawberries (2 of those little green baskety thingies). Light and summery too. From the Diane Mott Davidson series about a caterer who solves murder mysteries. This one is from "The Main Corpse." I read them for the recipes! If you don't have sugar snap peas, snow peas or green beans work too.

SUGAR SNAP PEA SALAD

Sugar Snap Pea Salad image

In this unusual summer salad, funky, creamy Camembert and crisp, juicy sugar snap peas unite make a texturally complex and very flavorful dish. You can use any washed rind cheese here as long as it's ripe enough to be spread on a plate. If you can't find a gooey-centered cheese, you can substitute a creamy goat cheese instead. Pea shoots make an ideal garnish, echoing the flavor of the sugar snaps, but if you can't get them, use any baby green or micro green in its place. If you want to work ahead, you can blanch the peas and mix up the dressing several hours ahead. But don't combine the salad ingredients until just before serving. In this dish, freshness is key.

Time 20m

Yield 4 appetizer servings

Number Of Ingredients 8

Salt and black pepper
1/2 pound sugar snap peas, trimmed
1 teaspoon minced green garlic or 1/2 teaspoon minced regular garlic
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil, more for drizzling
4 ounces pea shoots, ends trimmed, or use baby arugula or microgreens
10 ounces ripe, runny Camembert (or another washed- rind cheese such as Époisses or vacherin)
1 tablespoon finely chopped chervil or chives

Steps:

  • Bring a large pot of salted water to a boil. Have ready a bowl of well-salted ice water. Drop peas into boiling water and cook until crisp-tender, about 1 minute; use a slotted spoon to transfer peas to ice water to cool completely. Drain well and pat dry with a towel.

BUTTER BEAN AND SUGAR SNAP PEA SALAD

Butter Bean and Sugar Snap Pea Salad image

Butter beans resemble lima beans, which can also be used in this salad.

Provided by Martha Stewart

Categories     Salad Recipes

Number Of Ingredients 8

Coarse salt and freshly ground pepper
1 pound butter beans, shelled
1 pound sugar snap peas
3 tablespoons walnut oil, or more to taste
12 medium leeks, quartered lengthwise and well rinsed
1/2 cup fresh chervil leaves
1/2 ounce pea shoots (optional)
3 cups (1 to 2 ounces) baby sorrel, spinach, or dandelion leaves

Steps:

  • Bring a large stockpot of salted water to a boil, and prepare an ice bath. Blanch the butter beans just until tender, about 4 minutes. Transfer to the ice bath, and cool. Drain in a colander.
  • Blanch the snap peas in the boiling water just until tender, about 2 minutes. Transfer peas to the ice bath, and cool. Drain in a colander. Peel the skins from the butter beans, and set beans aside.
  • Heat 2 tablespoons walnut oil in a large skillet over medium heat. Add the leeks, and cook, stirring occasionally, until bright green and soft, about 12 minutes. Add 1/2 cup water, and stir well. Cover, and cook until leeks are soft, about 3 minutes. Season with salt and pepper. Add the reserved beans and snap peas, and toss over low heat until hot throughout. Adjust seasoning.
  • Transfer mixture to a large serving bowl. Add the chervil, pea shoots, if using, and sorrel; toss. Drizzle with the remaining tablespoon walnut oil, or to taste, and serve.

Tips:

  • For the freshest and most flavorful salad, use ripe, in-season berries and sugar snap peas. Look for berries that are plump and brightly colored, and sugar snap peas that are crisp and green.
  • If you can't find fresh berries, you can use frozen berries instead. Just be sure to thaw them completely before using.
  • If you don't have goat cheese, you can substitute feta cheese or crumbled blue cheese.
  • To make the dressing, you can use either white wine vinegar or champagne vinegar. If you don't have either of those, you can use red wine vinegar or apple cider vinegar.
  • If you want a sweeter dressing, you can add a little honey or maple syrup.
  • To make the salad ahead of time, simply assemble the salad and dressing separately. Then, store the salad in the refrigerator for up to 24 hours. When you're ready to serve, toss the salad with the dressing and enjoy!

Conclusion:

This sugar snap pea and berry salad is a light and refreshing salad that is perfect for a summer meal. The sweetness of the berries pairs perfectly with the crispness of the sugar snap peas, and the goat cheese adds a tangy flavor. The dressing is light and flavorful, and it helps to bring all of the ingredients together. This salad is sure to be a hit at your next party or gathering.
