1/4 cup lime juice
4 garlic cloves, minced
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

1/4 teaspoon pepper
4 boneless skinless chicken breast halves (1-1/4 pounds)
6 flour tortillas (8 inches) or taco shells, warmed

Steps:

  • In a large resealable plastic bag, combine the first eight ingredients; add chicken. Seal bag and turn to coat. 1 lb boneless skinless chicken breasts, cut into 1/4-inch cubes
1 large onion, chopped (about 1 1/4 cups)
2 cloves garlic, finely chopped
1 medium jalapeño chili, seeded, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
2 medium tomatoes, chopped (about 1 1/2 cups)
2 cups shredded lettuce
1 cup shredded Cheddar cheese (4 oz)
1/4 cup chopped fresh cilantro

Steps:

  • Heat taco shells as directed on package.

1 1/2 pounds boneless, skinless chicken thighs
1 tablespoon canola oil
12 mini flour tortillas, warmed
1 cup pico de gallo, homemade or store-bought
1 avocado, halved, peeled, seeded and diced

⅛ cup red wine vinegar
½ lime, juiced
1 teaspoon white sugar
½ teaspoon salt

10 (6 inch) flour tortillas
1 tomato, diced

Kosher salt and freshly ground pepper
2 plum tomatoes, seeded and finely chopped (about 1 cup)
1/4 cup finely chopped sweet onion, such as Vidalia
1 jalapeño, ribs and seeds removed, finely chopped
2 tablespoons fresh lime juice
Vegetable oil, for frying
12 small (6-inch) corn tortillas
Shredded iceberg lettuce, for serving

  • Preheat oven to 425°F. In a shallow baking dish, season chicken with salt and pepper; roast until a thermometer inserted in thickest parts (not touching bones) registers 160°, 40 to 45 minutes.
