1 jar (24 ounce) tomato and basil sauce (e.g. Classico)
24 ounces water, hot pepper sauce to taste, salt and freshly ground black pepper to taste, fresh parsley for garnish
3 tablespoons fresh lemon juice
2 tablespoons granulated sugar
1 tablespoon extra-virgin olive oil
1 medium fresh tomato, chopped
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
1/4 cup red onion, diced
1 1/2 cups English cucumber, diced
1/4 cup fresh basil, chopped

Steps:

  • Combine tomato and basil sauce, water, lemon juice, sugar, hot sauce, and olive oil in a large bowl. Stir in the tomato, red and yellow bell pepper, red onion, and cucumber. Add the basil, salt, and pepper.
  • Cover and refrigerate 2 to 3 hours to blend flavors.
  • Stir before serving. Top with fresh chopped parsley.

Tips:

  • Use ripe, fresh ingredients: The quality of your ingredients will directly impact the flavor of your gazpacho. Look for ripe, in-season tomatoes, cucumbers, and peppers. You can also use other vegetables, such as zucchini, carrots, or radishes.
  • Chill your ingredients before blending: This will help to keep your gazpacho cold and refreshing. You can also chill your blender bowl or container before blending.
  • Don't over-blend your gazpacho: You want your gazpacho to have a slightly chunky texture. If you over-blend it, it will become smooth and creamy, which is not the traditional texture of gazpacho.
  • Season your gazpacho to taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of vinegar or lemon juice for a bit of acidity.
  • Garnish your gazpacho with fresh herbs: This will add a pop of color and flavor to your dish. Some good options include basil, cilantro, or chives.

Conclusion:

Gazpacho is a delicious and refreshing soup that is perfect for summer. It is easy to make and can be tailored to your own taste. Experiment with different ingredients and seasonings to find your perfect gazpacho recipe.
