Yield 4 to 6 servings

Number Of Ingredients 7

2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced

Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

Cook, stirring, until the tomatoes have begun to cook down, about five minutes. Return the zucchini to the pan, add salt and pepper to taste, and reduce the heat to medium. Summer Squash Gratin with Tomatoes, Parmesan and Fresh Thyme image

Delicious veggie dish with intense flavor. Suitable as a main course for a light meal, or a fantastic summer side dish. A shallow oval gratin dish will give you the best results, but a shallow casserole dish will work as well, just be certain to cook it until the veggies have shrunken and the juices have reduced. Tips:

  • Don't overcrowd the pan. If you do, the vegetables will steam instead of sautéing.
  • Cook the vegetables over medium-high heat. This will help them brown and caramelize.
  • Season the vegetables to taste. Salt, pepper, and garlic powder are all good options.
  • Add the feta cheese and herbs at the end of cooking. This will prevent the cheese from melting and the herbs from wilting.

Conclusion:

This summer squash and tomato side dish is a delicious and easy way to enjoy fresh summer vegetables. It's perfect for a weeknight meal or a special occasion. The combination of sweet squash, tangy tomatoes, and salty feta cheese is sure to please everyone at your table.
