Number Of Ingredients 8

1 (15-ounce) can chickpeas, drained (garbanzo beans)
1/4 cup olive oil
1/4 cup sun-dried tomatoes (in oil or rehydrated)
2 tbsp. lemon juice
3 cloves garlic
1/2 tsp. paprika
2 tbsp. water
1/4 tsp. salt

Steps:

  • Process all ingredients in a food processor or blender until smooth, adding more liquid if needed. That's it! Enjoy your homemade hummus.
  • If you prefer, you can also add the sun-dried tomatoes last, and process the hummus until the tomatoes are finely diced rather than completely smooth. This will give your hummus a bit of extra texture if you prefer.
  • If your blender isn't strong enough to handle the sun-dried tomatoes, you may need to give them a quick coarse chop.

Sun-Dried Tomato Hummus--vegan & No Tahini image

Found this recipe in Taste of Home. Placing here for safe-keeping since I haven't tried yet! I'm thinking it doesn't need the extra olive oil since the sun-dried tomatoes are not drained. When I try it, I will probably leave that out. Todd Schmeling posted this in Taste of Home. Let me know if you try this and like it! :O)

Time 1h15m

Yield 16

Number Of Ingredients 10

4 cloves garlic
1 teaspoon salt
3 tablespoons tahini paste
¼ cup fresh lemon juice
2 (15.5 ounce) cans garbanzo beans, drained
½ cup olive oil
½ cup oil-packed sun-dried tomatoes, drained
¼ cup finely shredded fresh basil
2 tablespoons olive oil
⅛ teaspoon paprika

Steps:

  • Place garlic, salt, tahini, and lemon juice into a food processor; process until smooth. Pour in the garbanzo beans and 1/2 cup olive oil; process until smooth again, scraping the sides of the bowl occasionally. Once smooth, add the sun-dried tomatoes, and pulse until they have been chopped to very small pieces and are incorporated into the hummus. Finally, add the basil, and pulse a few times until mixed in.
  • Spread the hummus into a shallow serving dish, and make a few decorative grooves on top. Refrigerate at least 1 hour, then drizzle with 2 tablespoons olive oil and sprinkle with paprika before serving.

Tips:

  • Use ripe, flavorful tomatoes. This will ensure that your hummus has the best possible flavor. For the best result, dry the tomatoes yourself under the sun. If you don't have time or live in an area with no sun, store-bought sun-dried tomatoes are also fine, just make sure they are good quality.
  • Roast the tomatoes before using them. This will help to concentrate their flavor and make them more pliable. You can roast the tomatoes in the oven or a toaster oven at a moderate heat until they are slightly browned.
  • Use a food processor or blender to make the hummus. This will help to create a smooth and creamy texture. If you don't have a food processor or blender, you can mash the chickpeas and other ingredients by hand, but it will take a bit more effort.
  • Add seasonings to taste. Hummus is a versatile dish that can be seasoned in many different ways. Some popular seasonings include lemon juice, garlic, cumin, paprika, and cayenne pepper. You can also add fresh herbs, such as parsley, cilantro, or mint.
  • Serve the hummus with your favorite accompaniments. Hummus is a great dip for vegetables, pita bread, crackers, or chips. You can also use it as a sandwich spread or as a topping for grilled meats or fish.

Conclusion:

Sun-dried tomato hummus is a delicious and versatile dish that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste. Whether you are serving it as a dip, a spread, or a topping, sun-dried tomato hummus is sure to be a hit.
