A sweet oatmeal cookie with crunchy toasted sunflower seeds. This cookie is a family favorite. It calls for coconut, but I like them better without the coconut.

Time 27m

Yield 36 cookies, 18 serving(s)

Number Of Ingredients 11

1 1/4 cups quick oats
1 cup all-purpose flour
1/4 cup wheat germ
3/4 cup light brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup corn oil
1 egg
1 teaspoon vanilla
1/2 cup raisins
1/2 cup unsalted sunflower seeds

Steps:

  • Preheat oven to 325°F Mix all ingredients together in mixing bowl. Form into 1" balls and place on ungreased cookie sheet. Bake for 12 to 15 minutes.
  • If you find them hard to form into the 1" balls, add a tiny bit of water to the recipe to make it less crumbly.

Tips:

  • Use old-fashioned oats: Old-fashioned oats provide a chewier texture than quick oats or instant oats.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough: Chilling the dough for at least 30 minutes before baking will help the cookies hold their shape.
  • Bake the cookies at a high temperature: Baking the cookies at a high temperature will help them spread and create a crispy exterior.
  • Don't overbake the cookies: Overbaking the cookies will make them dry and crumbly. Bake the cookies just until the edges are golden brown.

Conclusion:

Sunflower oatmeal cookies are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. With their chewy texture, sweet flavor, and nutty crunch, these cookies are sure to be a hit with everyone who tries them.
