SUNNY'S APPLE AND GINGER CRANBERRY JELLY MOLDS

Categories     side-dish

Time 3h40m

Yield 4 servings

Number Of Ingredients 7

2 pounds Granny Smith apples, quartered
4 cups cranberry juice
One 8-inch piece fresh ginger, sliced
1 cinnamon stick
3/4 cup sugar
Two 1-ounce packages unflavored gelatin
Nonstick cooking spray, for the party cups

Steps:

  • Add the apples (seeds and all), cranberry juice, ginger and cinnamon stick to a large pot. Bring to a boil, then reduce the heat and steep on medium until the apples are mushy, about 25 minutes. Strain the contents of the pot using a fine-mesh sieve and a moist paper towel or cheesecloth. Do not press anything through the sieve. Allow to drip to about 2 cups of liquid. Discard the solids.
  • Wipe the pot clean or rinse with water. Pour all but 1/4 cup of the liquid back into the pot and add the sugar. Cook on medium high until the sugar dissolves.
  • Add the gelatin to the reserved 1/4 cup liquid and stir. Stir this into the pot and remove from the heat. Let cool until just warm.
  • Coat the inside of four 8-ounce ridged party cups (or several shot glass-size party cups) with cooking spray (you may want to double the cups so you don't warp them). Once the liquid has cooled a bit, divide among the cups. Place on a tray and refrigerate until firm, about 3 hours.
  • To unmold, dunk the sides of the cups in warm water and wiggle out the jelly.

SUNNY'S CRANBERRY, APPLE AND FIG STREUSEL TART

Categories     dessert

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 21

2 pre-made pie crusts (the kind that roll up, not pre-formed)
1 cup granulated sugar
1/4 cup light brown sugar
1/4 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon almond extract
1/2 teaspoon pumpkin pie spice
Zest of 2 lemons
2 tablespoons fresh lemon juice
1 pound fresh or frozen and thawed cranberries, picked through to remove stems and field debris
4 Granny Smith apples, cored, peeled, and chopped
15 fresh Black Mission or Brown Turkey figs, stemmed and sliced
2 cups all-purpose flour
1 3/4 cups packed light brown sugar
1/4 cup granulated sugar
1 1/2 sticks (12 tablespoons) ice cold unsalted butter, cut into teeny weeny cubes
Kosher salt
1 cup almonds, roughly chopped
Sunny's Bourbon Whipped Cream, for serving, recipe follows
1 cup heavy cream
1 tablespoon bourbon
1 tablespoon sugar

Steps:

  • Par-bake the crust: Preheat the oven to 400 degrees F. Use both pie crusts to cover the bottom and sides of a 13-by-9-inch casserole dish. Patchwork works, just cover the holes. Dock by pricking holes in the crust with a fork all over the bottom. Bake until lightly golden, 15 to 20 minutes.
  • For the fruit filling: In a large bowl, stir together the granulated sugar, brown sugar, flour, almond extract, pumpkin pie spice, lemon zest and lemon juice. Divide the mixture among the smaller bowls: 3/4 cup in the first, 1/2 cup in the second and 1/4 cup in the third. (Think of the 3 bears: poppa, momma and baby bear bowls.)
  • Put the cranberries in the poppa bear bowl; in the momma bear bowl, add the apples; and in the baby bear bowl, add the figs. (Do you need a translation? Add cranberries to the bowl with the most flour mixture, apples to the bowl with 1/2 cup of the flour mixture, and the figs to the bowl with the least amount of the flour mixture.) Stir each bowl independently, unless you¿re an octopus.
  • For the streusel topping: In a food processor add the flour, brown sugar, granulated sugar, butter, and a pinch of salt. Blend until crumbly, taste and add more salt if needed. Pour into a small bowl with the almonds and stir.
  • Preheat the oven to 400 degrees F. Pour the fruit filling into the prepared crust, dividing it into thirds with the apples in the middle and the figs and cranberries on either side. Top evenly with the streusel mixture. Cover the pie edges with aluminum foil so they don¿t overcook. Bake until the top is golden brown and the fruit is beginning to bubble around the edges, 40 to 50 minutes. Serve warm with the bourbon whipped cream.
  • Whisk the cream in a large bowl until soft peaks form. Add the bourbon and sugar and continue whisking until the cream holds slightly stiff peaks when the whisk is removed from the bowl. Refrigerate and serve cold.

CRANBERRY, APPLE, AND FRESH GINGER CHUTNEY

Cranberry, Apple, and Fresh Ginger Chutney image

This piquant chutney is not as sweet as traditional cranberry sauce. The bite of the fresh ginger will become more pronounced as the chutney rests. If you have any left after Thanksgiving, try it in turkey sandwiches with a smear of cream cheese. Oh. My. God.

CRANBERRY-APPLE GINGER SAUCE

Cranberry-Apple Ginger Sauce image

Use only Granny Smith apples or a similar firm apple, this is a fantastic cranberry sauce recipe, and one that you will be making all time once you taste it! If you prefer a less sweeter sauce then reduce the sugar by a couple of tablespoons. If you don't have a cinnamon stick just add in a pinch of cinnamon powder, or omit the cinnamon completely. Plan ahead the sauce needs to chill for a minimum of 3 hours before using.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any scrambling.
  • Use Fresh Ingredients: The fresher your ingredients, the better your jelly will taste. If possible, use organic fruits and vegetables.
  • Choose the Right Pectin: Pectin is a natural gelling agent that helps to thicken jelly. There are different types of pectin available, so be sure to choose one that is specifically designed for making jelly.
  • Follow the Recipe Carefully: Jelly making can be a delicate process, so it's important to follow the recipe carefully. Don't skip any steps or substitute ingredients unless you know what you're doing.
  • Use a Candy Thermometer: A candy thermometer is essential for making jelly. It will help you to ensure that the jelly reaches the correct temperature for setting.
  • Test the Jelly for Doneness: Before you pour the jelly into molds, test it for doneness by placing a small amount on a cold plate. If the jelly wrinkles when you push your finger across it, it is ready.
  • Pour the Jelly into Molds: Once the jelly is ready, pour it into molds and let it cool completely. You can use any type of mold you like, but individual molds will make it easier to serve the jelly.
  • Chill the Jelly: Once the jelly has cooled, chill it in the refrigerator for at least 4 hours before serving. This will help the jelly to set and firm up.

Conclusion:

Apple and ginger cranberry jelly molds are a delicious and festive treat that is perfect for any occasion. With a little planning and effort, you can easily make this recipe at home. Just be sure to follow the tips above to ensure that your jelly turns out perfectly.
