Sunny's Easy Roasted Garlic and Pumpkin Hummus image

Categories     appetizer

Time 2h35m

Yield 2 cups

Number Of Ingredients 11

1/2 cup olive oil
3 cloves garlic, smashed
One 15.5-ounce can garbanzo beans, drained
1 cup canned pumpkin puree
2 tablespoons lemon juice, plus more if needed
2 tablespoons tahini
1/2 teaspoon pumpkin pie spice
Kosher salt
1/4 cup pumpkin seeds
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper

Steps:

  • For the roasted garlic: Preheat the oven to 375 degrees F.
  • Place the olive oil and garlic in a ramekin or small baking dish and roast, making sure the garlic does not begin to brown but just turns a light golden color and becomes tender, 15 to 20 minutes.
  • For the hummus: Add the roasted garlic cloves plus 2 tablespoons of the oil from the ramekin (reserve the remaining oil) to a food processor along with the garbanzo beans, pumpkin puree, lemon juice, tahini, pumpkin pie spice and a nice pinch of salt. Blend until smooth, then add a bit more of the roasted garlic oil to smooth out the texture. Taste and add a bit more salt and lemon juice if needed. Spoon into a bowl and pour any remaining olive oil over the top; cover and refrigerate at least 2 hours.
  • For the pumpkin seed garnish: When ready to serve, add the pumpkin seeds and a pinch of salt to a saute pan on medium-high heat and toast, tossing, until the seeds are fragrant and develop a bit of a sheen, about 4 minutes. Season with a pinch of salt.
  • Sprinkle the toasted pumpkin seeds over top of the hummus and serve slightly chilled or at room temperature.

ROASTED VEGETABLE GAZPACHO

Roasted Vegetable Gazpacho image

For this recipe you will need roasted vegetable broth. I have published one such recipe (recipe#415106). With this broth plus more vegetables that this recipe calls for, you will have a very healthy, very delicious hot weather soup. However you can use regular vegetable broth such as is available in the supermarket if you wish. Gazpachos may be blended smooth as this one is, or chunky with chopped vegetables. You may wish to reserve some of the roasted veggies to add and give texture to the soup. Gazpachos also have a picante taste. You may wish to "doctor" this soup up to meet your expectations. This soup is so tasty because roasting brings out the best in veggies. Enjoy!

SPEEDY GAZPACHO

Speedy Gazpacho image

Fire-roasted salsa adds depth of flavor to this fat-free soup; it can usually be found in the supermarket deli case.

Yield Makes 6 to 8 servings

Number Of Ingredients 8

1 English hothouse cucumber (about 12 ounces), peeled, cut into large chunks
1 large red bell pepper (about 8 ounces), halved, seeded, cut into chunks
2 cups (or more) bottled tomato juice
1 14 1/2-ounce can diced tomatoes in juice
1 12 1/2-ounce container refrigerated fire-roasted tomato salsa
1 cup roasted red peppers from jar
1/2 cup coarsely chopped fresh cilantro
2 tablespoons red wine vinegar

Steps:

  • Working in 2 batches and using on/off turns, finely chop cucumber and bell pepper in processor. Add 2 cups tomato juice and remaining ingredients; blend to coarse puree. Season to taste with salt. Transfer to bowl. Cover and chill 2 hours for flavors to develop. Mix in more tomato juice by 1/4 cupfuls if too spicy.

Tips:

  • Use ripe, in-season vegetables. This will ensure the best flavor and texture in your gazpacho. You can also roast your own vegetables for a deeper, more complex flavor.
  • Don't overcook the vegetables. They should be tender but still have a slight bite to them.
  • Use a good quality olive oil. This will add a rich, fruity flavor to the gazpacho.
  • Season the gazpacho to taste. You may want to add more salt, pepper, or lemon juice, depending on your personal preferences.
  • Chill the gazpacho for at least 2 hours before serving. This will allow the flavors to meld and develop.
  • Garnish the gazpacho with your favorite toppings. Some popular options include croutons, chopped vegetables, and herbs.

Conclusion:

Sunny's Easy Roasted Green Gazpacho is a delicious, refreshing, and healthy soup that is perfect for a summer meal. It is easy to make and can be tailored to your own personal preferences.
